Rack of lamb broad beans and salad

Today I am using my remaining rack of lamb previously bought on sale. I am going to use the broad beans my sister gave me as her neighbour gave her too much. I will use 4 today and keep the rest for other dishes.

Thawed my rack of lamb overnight in fridge. Will be adding rocket and spinach along with cherries tomatoes and baby carrots for colours on my plate. I am glad to create a new marinade this time I am using garlic powder, chili powder, cayenne powder, lemon juice together with oil, salt and black pepper.

The best way to get flavour on lamb is rubbing the marinade on it all over and then chill in fridge for 30 minutes. This called for training my patience for the flavoursome lamb. Well, it sure is well flavoured, kicking spicy enough for my taste bud and comforting satisfied delicious with a glass of red wine. Let’s roast!!!!


2 rack of lamb
1 handful rocket and spinach, bought
6 medley cherries tomatoes
4 broad beans
1 baby carrot, cut to bite size
2 Tbs oil, plus extra
1-2 Tbs lemon juice
1/2 Tbs chili powder
2 Tsp cayenne powder (OPT)
1 1/2 Tsp garlic powder
black pepper


Preheat oven 175 degrees C. Mix well garlic powder, lemon juice, cayenne powder, chili powder, oil, salt and black pepper in a bowl. Place lamb in the spice mixture, then rub the spice mixture onto the lamb using your hands, covering all sides. Cover and chill in the fridge for 30 minutes.

After 30 minutes, place them in a baking tray with cherries tomatoes. Let lamb sit for 5-10 minutes in room temperature before putting in oven cook for about 5 minutes, halfway turn rack around and cook for another 7-8 minutes or to your liking. I prefer medium to well done.

Meantime, wash and trim the end of broad bean and then pull the string along the side out. Cut carrot into bite size. Put both vegetables in a microwave safe bowl with enough water cook for 6-7 minutes or until tender. Drain and set aside keep warm.

Set rocket and spinach salad in the middle of plate. Followed by broad beans to make a square box and then carrot with 4 cherries tomatoes around it. The other 2 cherries tomatoes in the centre. Drizzle some juice from baking tray over it. Then lamb leaning on the 2 cherries tomatoes. Serve with a glass of red wine and enjoy!!!!
