Felt like having fruits for breakfast. I don’t normally eat breakfast, just drink a big cup of coffee. Since all my fruits are a few days old and don’t want them to be mouldy. I decided to puree some strawberries, papaya and half banana with milk.
The remaining strawberries, the remaining half banana, I sliced them, and add blueberries in. Looking at the dining table I have some leftover pandan cake from a friend. Being creative, I cut them into bite size and add them into my bowl making it similarly to trifle method but without custard just fruits pureed.
Keeping myself busy in lockdown and stay well. My breakfast fruits is completely easy, quick, healthy and colourful. Couldn’t resist to garnish it I had added chocolate sprinkles. Let’s eat breakfast and stay strong!!!
Ingredients
2 triangle pieces of leftovers pandan cake, cut into bite size
8 strawberries, sliced
100 g blueberries
1/2 banana
chocolate sprinkles, garnish
Fruits puree
6 strawberries, stems removed, halved
6 pieces papaya
1/2 banana
1/2 c milk
Method
In blender, blend 6 strawberries, papaya, banana and milk until pureed. Set aside. In a bowl, add pandan cake pieces in a layer. Pour some puree over it to soak it. Then layer sliced strawberries over the top followed by blueberries.
The second layer lay pieces of pandan cake, pour puree over it, and add another layer of strawberries followed by blueberries and layer halved banana slices in the middle. Next pour puree over it. Add the remaining strawberries and blueberries on top. Sprinkle chocolate over it. Enjoy breakfast!!!!
