Strawberry chocolate sour cream cake

Felt like having a cake. Got leftover strawberries and melting chocolate with sour cream that is going to expire tomorrow. Discovered that I don’t have butter, so I use oil. No lemon juice, use lime juice. Also, my eggs are going to expire in 4 days. For a change I tried using cake flour and added baking powder.

My sister called saying that my brother in laws told her he had not had my cake for a while. As he is dropping off my dinner, I though best bake for him and at the same time I too can have some for my cravings.

It’s a straight forward easy cake to make. I enjoyed it. My sister and brother in law said my cake is moist, delicious and soft. Glad that I gave them some and some to my nephew too. Let’s bake!!!


220 g castor sugar
320 g cake flour
300 g sour cream
180 g melting chocolate
6 strawberries, chopped
3 eggs
125 ml oil
20 ml lime juice
2 Tsp vanilla extract
1 1/4 Tsp baking powder


Preheat oven 180 degrees C. Grease and flour the tube pan and set aside.

Combine 250 g flour first, sugar and baking powder in deep plate. Beat eggs, lime juice, vanilla extract, oil and sour cream in mixing bowl until combined. Add flour mixture to eggs mixture. Beat until combined don’t overmixed. At this stage if batter is running add 70 g flour and mix well.

Add melting chocolate and strawberries, gives couple of stirs to mix well. Pour into prepared pan. Smooth top evenly. Bake for 1 hour 15 minutes or until skewer out clean. Off the oven, leave cake in oven for 30 minutes.

Remove cake from oven onto rack to cool further inverted. Let it drop down. If it didn’t use a palate knife gently remove the base. Then turn back to the top onto plate. Serve with a cup of coffee or tea. Enjoy!!!!
