Mee goreng minced pork beans carrots in soup

Meal for one in isolation

I have leftover minced pork, beans and carrots. Let’s combined it in my bought mee goreng packet. As it’s Winter cold day, a hot savoury soup would be comforting and hearty to have. Usually, mee goreng is cooked dried.

Google: “Mee goreng Mamak, or Mamak-style noodles, is a type of noodle dish from Malaysia that you can find at a lot of local roti canai eateries. Mee is “noodles” in Malay and goreng means “fried,” which is the method of cooking this meal. This dish is normally made with fresh egg noodles, boiled potatoes, pan-fried tofu, choy sum, and tossed with a delicious sauce”.

Back in Malaysia, my family liked to hang out at Mamak stalls or kopi tiam. Mamak stalls are often open-air with an open “kitchen.” Anyone walking there could see all the cook flip and toss the roti, pull the milky tea, and of course cook these noodles in a big, heated wok. The fragrance of these dishes and the sound of the spatula clanking the wok always led us to the stall buying double to have for super.

Today, my cheat mee goreng is transformed into a completely different meal. I have added leftover to accompany the packet mee goreng. My meal is delicious, hot savoury soup with mee goreng flavoured. Let’s cheat cooking!!!

Ingredients


500 g minced pork
2 carrots, cut into bite size
12 green beans, stems remove and cut about 1” long
1 packet mee goreng with condiments
1 Tbs minced garlic
1/2 onion, diced
hot boiling water
1-2 Tbs oil
salt
pepper

Pork marinade

2 Tsp cornflour
1 1/2 Tsp light soy sauce
2 Tbs oyster sauce
1 Tsp ginger powder
2 Tsp sesame oil
1 Tsp chicken stock powder
4 Tbs water

Method


In a large bowl mix the marinade for pork until well combined. Add pork, tossing it in the marinade and make sure meat are covered. Let stand at room temperature for about 10-15 minutes.

Heat deep pan on medium high heat and add oil. When the oil is hot, add garlic and fry until fragrant. Then add onion and stir fry for 1-2 minutes, until it soften. Add the marinated pork and let brown briefly. Then add carrots and beans cook about 4-6 minutes. Add salt and pepper, toss to mix well until pork, carrots and beans are cooked and soft. Now add in marinade sauce and check seasoning.

Transfer back to marinade bowl keep warm. Put kettle on. Open the mee goreng packet, place uncooked mee goreng and the condiments in a bowl. Now pour hot boiling water over it. Microwave for about 6-7 minutes until softened. Remove from microwave and spoon about a ladle of cooked minced pork, beans and carrots with the marinade onto the cooked mee goreng. Toss to mix well. Serve immediately with a glass of white wine. Enjoy!!!!!
