As it’s a cool Winter day, baking technique seems like a proper meal to have. Today I am baking apple and brussels sprout, which is topped with a browned crust, using plain flour, double cream, thickened cream, orange juice, Italian Seasoning, Parmesan Pecorino cheese, egg whites and butter.
Got left over double cream and thickened cream and Parmesan Pecorino cheese which will expire in three days. Also, I have egg whites which I only use yolks to make tortellini carbonara earlier. Bought Brussels sprouts on sale. Looking at my fruit bowl I have left an apple that is slightly bruise. Got to use it before it go bad, don’t like wasting food.
I am happy that my baked meal turned out browned crust, flavoured with Italian Seasoning, comforting delicious to have on a cool Winter day. Let’s bake!!!
2 Tbs oil
1 Tbs margarine
50 gm plain flour
300 ml thickened cream
150 ml double cream
50 ml orange juice
80 gm Parmesan Pecorino cheese
500 gm Brussels sprouts, trimmed, outer leaves discarded
1 apple, thinly sliced
2 egg whites
chili flakes, garnish
Preheat oven to 190C. Steam Brussels sprouts using rice cooker and steamer basket until almost tender about 7 minutes, and transfer to a buttered ovenproof dish. Lay the sliced apples on top of Brussels sprouts in one layer.
Heat oil and margarine in a saucepan over medium-high heat until foaming, then add flour and stir continuously until sandy coloured about 1-2 minutes. Gradually add thickened cream, double cream, and egg whites beating continuously until smooth and incorporated about 4-6 minutes. Bring to the boil, stir in cheese, and orange juice. Season with black pepper.
Spoon sauce over apple and Brussels sprouts. Scatter a tiny bit of salt and Italian Seasoning. Bake until golden and bubbly about 30-40 minutes. Serve hot with chili flakes if you are chili lovers like me. Enjoy with a glass of white wine.
Note: You may omit orange juice and egg whites. I added orange juice as I use double cream which is too creamy and egg whites as I don’t want to waste it. You can add any cheese of your choice.
Parmesan Pecorino cheese are quite salty. So do taste if you needed more salt. You can use any herbs of your choice. You can add potatoes instead Brussel sprouts. Or omit apple if you don’t want it.
