Prawn tortellini and vegetables in carbonara sauce

Bought prawn tortellini 3 weeks ago on sale. While clearing my freezer and looking at it think best cook it before it is not fresh anymore. I also have a quarter of cabbage that are going to turn black and leftover caulilini 2 stalks and half a punnet of sliced mushrooms that it not going to last for another day.

Decided to cook it for dinner last night. Today I am experimenting making my own carbonara sauce. I have seen a lots of recipes making them. As usual I love to recreate ideas from all the google browsing to fit with what I have in my pantry, freezer and fridge. I came out with a simple, quick and easy dinner. Glad that it turn out well despite my eggs are not fresh anymore expired 1 day. I cook my tortellini in microwave.

My tortellini and vegetables are delicious and comforting with leftovers for a cold winter night. This serving is for 2 meals. Let’s cook!!!

Ingredients

300 g prawn tortellini
2 stalks caulilini, cut into bite size
150 g sliced mushrooms
6 cabbage leaves, cut into bite size
100 g Parmesan and Pecorino cheese, plus extra
2 egg yolks
1 Tbs proactive margarine
1 Tbs minced garlic
black pepper
salt (OPT)
chili flakes (OPT)
oil

Method

Place yolks, Parmesan, Pecorino and black pepper in a bowl. Mix well. Set aside. In microwave safe bowl microwave tortellini for about 18-22 minutes. Drain, reserved water and set aside.

In a deep pan on medium high heat, add 2 Tbs oil, margarine and garlic cook until fragrant and brown slightly. Then add caulilini cook for 3 minutes. Next add cabbage leaves cook until soften about 5 minutes. Add about  1/4 c pasta water to pan. Add yolk mixture, mix around and toss until creamy. Add cooked tortellini half first toss to combine with creamy carbonara sauce.

Switch off hob and check seasoning. I put in a pinch of salt. Then add another 1/4 c pasta water and a bit more cheese for more sauce. Now put the remaining half cooked tortellini and mix well to coat in creamy sauce. Spoon tortellini and vegetables onto bowls. Sprinkle chili flakes over the top and drizzle some oil. Serve with a glass of white wine. Enjoy!!!!

Note: Parmesan and Pecorino cheese are quite salty. So, check your taste of saltiness. You can put bacon or guanciale as many recipes have. You can use spaghetti, bucatini or angel hair pasta. You can omit chili flakes.
