I have not had miso soup and tofu for a while. Since I had fried tofu at my sister house. I decided to try make my own coating. I use flour and corn flour. I use dashi paste. This is a simple easy soup to make. It’s comforting delicious soup to have on a cold day. Let’s cook!!!
Ingredients
10 g thinly sliced black fungus
300 g firm tofu, cut using jelly cutter into cubes
2- 2 1/2 Tbs dashi paste
hot water
1 stalk spring onion, cut for garnish
Fried tofu Ingredients
300 g firm tofu, cut into cubes using jelly cutter
1/4 c plain flour, plus extra if needed more
1/8 c corn flour, plus extra if needed more
2 Tsp garlic powder
2 Tsp ginger powder
pink Himalayan salt
crack black pepper
oil for frying
Method
Place the thinly sliced fungus in a bowl to soak for 30 minutes. Set aside. Place both firm tofu on paper towel drip dry and using another paper towel press top gently to pat dry. Then cut with jelly cutter and place on paper towel plate. Set aside one 300 g tofu. Meantime, add plain flour, corn flour, garlic powder, ginger powder, salt and black pepper in a deep dish and mix to combine well.
Put the remaining 300 g tofu cubes in flour mixture and coat well all around. Shake off flour mixture before putting into the hot oil. Heat enough oil about 1 inch high in frying on medium heat. Place 5 cubes at a time. Turning tofu all around about 4-7 minutes each till golden brown. Use tong to pick up cook tofu and drain on paper towel plate. Repeat till all tofu are cooked and golden brown.
Switch off heat and move the pan away to cool oil. Save the oil in a container for cooking another dish. Now put kettle on. Once water boil place in pot about 3 cups of water add the dashi paste stir to mix well. Add cut 300 g tofu that you set aside into hot miso. Next add the thinly sliced black fungus cook for about 7 minutes.
Add in the fried tofu and let simmer for 4 minutes. Once cooked. Spoon into serving bowls and garnish with spring onion. Serve it with a bowl of white rice or fried rice. Enjoy!!!!
