Strawberry buttered hot cross bun pudding

Could not sleep, too hot, and feeling hungry. Got up and went to the kitchen to search for food to eat at 3 am. Found leftovers hot cross buns, pouring custard and fresh strawberries. Decided to make pudding a comfort snack perhaps early breakfast.

When you are hungry, you are going to just dump everything together, missing the majority of the method of making a really proper pudding. Buttered hot cross buns, cutting up strawberries and make a quick eggy vanilla mixture.

Assemble and soak them for 10 minutes before baking. Waiting 30-35 minutes to cook. Then another 10 minutes waiting for it to cool slightly and stomach is growling louder than the TV before I can gobble up and feeling satisfied. Then go back to sleep.

This is trial and error method, and not focus mind. I have to say it’s yummy, easy, comforting pudding. Let’s bake!!!!

Ingredients

2 stale hot cross buns
8 Tsp sugar
2 eggs, lightly beaten
50 ml pouring custard
1 Tsp vanilla extract
4 Tbs Botrytis Semillion sweet white wine, divide
4-5 strawberries
molasses

Method

Preheat the oven to 150°C. Cut into half and butter hot cross buns. Then cut into pieces and put 2 halves in small baking bowl. Pour 2 Tbs Botrytis Semillion onto hot cross buns to dampened it slightly.

Cut strawberries and lay them onto the dampened hot cross buns. Place the remaining 2 halves hot cross bun over the top. Pour the remaining Botrytis Semillion onto hot cross buns. Then beat egg and sugar in a medium bowl lightly. Add custard and vanilla extract, beating well to combine.

Pour eggy custard over hot cross bun and strawberries. Then leave to soak for 10 minutes. Squirt some molasses over the top for caramelised top. Place in the oven for 30-35 minutes. Let it cool for 10 minutes before eating.

Note: You might need more or less time as oven temperature vary. Remember you do need it to soak in and make sure not too dry too. Do cover with foil if you are going to need to put longer in the oven. To prevent burning hot cross buns. You can use croissants or any loaf of your choice.
