Figs are abundant still in my garden. Gave some to friends and one made Figs jam for me. Thanks to God for the abundant figs and never run down with ideas to use figs. They add bursts of juicy flavour to sweet treats and savoury salads, so pick up some punnets from the market and use them in your kitchen.
I have created a tasty new flavour since my last blueberries mascarpone. It’s figs from my garden, with mascarpone with a strawberry flower, blueberries and figs jam and flesh topping that are perfect for dessert or afternoon tea. I have attached the recipe at the bottom for you to try it.
This cake does not have butter or oil in it. Only eggs, figs pureed and flesh, mascarpone, plain flour, baking powder, lemon zest, sugar, salt, orange juice and icing sugar (OPT) . It’s moist, juicy flavour, and delicious with a cup of coffee. Let’s bake!!!!!
12 plums figs, divided
250 g mascarpone
330 g plain flour, sifted
180 g sugar
1 1/4 Tsp baking powder, sifted together with flour
100 ml orange juice, 50 ml for puree
pinch of salt
1 strawberry, cut into flower shape, decoration
4 blueberries, decoration
figs jam to spread on top (OPT)
icing sugar (OPT)
Preheat oven 180 degrees C. Grease and flour 23 cm spring form pan. In a blender pureed 6 figs with 50 ml orange until smooth. Beat eggs, sugar, and salt until light frosty about 7 minutes. Then add figs pureed, 100 ml orange juice and mascarpone and continued beating till smooth. Add flour and baking powder in batches about 5. Mix well.
Chopped the remaining 6 figs to bite size and fold into the batter. Spoon batter onto prepared pan. Smooth top and give a couple of gentle knock on the bench to remove any bubbles. Sprinkle some icing sugar over the top of batter. Bake for 50-60 minutes. Skewer in and out clean then cake is done.
Remove from oven on to rack to cool completely. When it’s cool down transfer to serving plate, spread jam over the top with some bits of the figs flesh around the cake top and place strawberry flower in the middle and 4 blueberries around it. Serve with coffee or tea or dessert wine.
Note: Oven temperature may vary. You might need or less time. You might need more or less flour depending on your fruits contain of water. Or you might need more or less liquid.
You can use blueberries, peaches, nectarines, apples, pears and oranges or your choice. You can slice them and decorate them in circle or line them up.
