Blueberry chocolate and cinnamon cake

Our physical appearance doesn’t define who we are; it’s our heart that matters. To those who follow Jesus, what difference does this make? Quite simply, everything! Our identity as children of God provides our foundation and shapes how we see ourselves and the world.

I know I am a part of God’s family help me step out of my comfort zone as I follow Him. If we obsess over appearances while looking for loopholes in God’s clear command, we’re violating the Spirit of His Law. Only God, through the righteousness of Jesus can give us a clean heart.

My blueberry chocolate and cinnamon cake doesn’t look presentable as I would love it to be so that I can get everyone applaud. However, I have to accept that it’s not what God is looking for. He is looking for my clean heart and honestly following Him, dependence only in Him alone.

Even though there are some crack in my cake, I can trust God that it’s delicious. For I bake this cake with love poured out to make a birthday cake with heart shape chocolates. Something different this year, with Corona Virus still going on, the birthday cake candle were put out with a fan. Thank you God for your help that I am able to present a birthday cake for my nephew even though it’s not well presented. I am glad that everyone love it. Let’s bake!!!!

Ingredients

250 g mascarpone
225 g plain flour
125 g blueberries
120 g light brown sugar
180 g dark chocolate
80 g white chocolate
4 eggs
½ lemon zest
60 ml orange juice
1 Tbs cinnamon powder
3 Tbs skim milk
3 Tbs raspberry sauce
4 Tsp baking powder
1 Tsp vanilla extract
a pinch of salt

Garnish

80 g dark chocolate
3 Tsp olive oil
25 g blueberries
icing sugar

Method

Preheat oven 180 degrees C. Grease and line 20 “ square spring form pan. Beat eggs and sugar until pale and fluffy. Add mascarpone, mix until smooth. Then add zest, orange juice and vanilla. Continue to beat until combine. Sift flour, cinnamon, baking powder and salt and gently beat in until incorporated.

Add blueberries, white and dark chocolate and mix well. Spoon on to prepared baking pan. Smooth the top and give a gentle couple of knock on the bench top. Bake 50 minutes or until skewer come out clean. Remove from oven. Let it cool in pan 20 minutes.

Gently release the side and let cake cool completely. Dust with icing sugar and garnish with blueberries and place 4 heart shapes chocolate in the centre surrounded by blueberries. Enjoy!!!!!

Note: Oven temperature may vary. You might need less or more time. You may use any fruits of your choice. You may omit icing sugar if you don’t want it to be too sweet.

You can make frosting and cream your cake. You may also omit heart shapes chocolate or even add your own creation chocolates. You can use strawberries dunk in chocolate as decorations.
