I felt like having a healthy meal. Heard many people mention about cauliflower rice is healthy and quick to make. I never get to make it.
Today, I tried making it with my leftover medley tomatoes that is not looking fresh, herbs, olives and blueberries. This is trial and error creation. Well, I am glad it turned out perfect beautiful, colourful and delicious.
Adding herbs blueberries olives and drizzle lemon juice do make it appetizing to my eyes and stomach. Are you tempted? This can be served at Christmas party and great to take it to friends place to share too. Let’s cook, shall we?
Ingredients
1 medium head cauliflower, florets
6 medley tomatoes
120 g blueberry
4 Tbs black olives with seeds
15 g mint leaves
7 g sage leaves
7 g parsley
2 stalks spring onion
salt
pepper
drizzle lemon juice (OPT)
Method
Remove discard outer green leaves that is not nice from cauliflower, place the nice fresh leaves into food processor. Cut cauliflower into florets and place into food processor.
Now add in the herbs, medley tomatoes and a pinch of salt and pepper. Blitz, it till fine grainy. Pour onto a microwave bowl cover tightly with cling wrap. Microwave on high 5 minutes.
Give cauliflower rice a good tossing to mix up and fluff it. Check seasoning. Drizzle some lemon juice. Then scatter the blueberries and olives over it. Snips the spring onions all over it. Serve with a glass of white wine.
Note: you can serve with a meat dish or just eat on it on. You can use any herbs or vegetables to add in.
