
Bought a can of corned beef, eggs, onion, lettuce, and long bread on sale. Today, I am still learning how to make mayonnaise. I have not quite perfected making mayonnaise. Hopefully, one day I will make it better: the more practice, the better it gets.

My simple lunch that has healthy ingredients to balance the unhealthy consumption of corned beef. It’s colourful and delicious. Let’s cook!!!
Ingredients
Mayo ingredients
1 egg
1 Tbs Dijon mustard
1 Tbs white wine vinegar
1/4 Tsp salt
1 cup canola oil
1 Tsp fresh lemon juice
Corned beef on long bread
1 can of corned beef
2-3 eggs
1 onion, sliced
1 Tbs minced garlic
6 long bread
lettuce
Swiss cheese or your choices
oil
salt
black pepper
butter, spread on long bread
Method
Mayonnaise
Combine egg yolk, lemon juice, vinegar, mustard, and salt in medium bowl. Whisk until blended and bright yellow, about 30 seconds. Next add 1/4 cup oil first to yolk mixture, small break stream at a time, for 4 minutes.
Then gradually add remaining oil in very slow stream, whisking constantly, until mayonnaise is thick, for 8 minutes (mayonnaise will be lighter in colour). Store in sterile airtight container. Keep in fridge.
Note: I made my own mayonnaise from scratch by watching Jamie Oliver TV episode. You can buy mayonnaise. I have made mine in advance; store in airtight sterile bottle and use it when I needed. (best use before 2 weeks). You may serve with side salad.
Corned beef on long bread
Heat 2 Tbs oil in a pan over medium heat. Cook garlic and onion slices until softened, then add diced corned beef and cook for 10-12 minutes to get it slightly crispy, stirring occasionally. Season with salt and pepper to taste.
Crack the eggs into a bowl, lightly beaten. Then pour over the corned beef mixture. Stirring and breaking eggs until eggs are cooked about 3-5 minutes. Once done spoon onto plate. Cover with tented foiled. Set aside.
Cut the long bread into half lengthwise and butter it both sides. Lay some lettuce on the bottom part of the bread. Followed by cooked corned beef egg onion mixture. As for me, I squirt some chili sauce on top of corned bee egg onion mixture. The top half of long bread, place 2 halved Swiss cheeses slices and the squirts mayonnaise over the cheese. Enjoy with a cup of tea or coffee of your choice!!!
