
A rarely seen jellyfish swim with the currents in the ocean near Baja, California. It’s body shone with fluorescent shades of blue, purple, and pink, bright against the backdrop of the black water. Elegant tentacles waves gracefully with each pulsing of its bell shaped doom.
As I watched the amazing program of the “Halitrephes maasi” jellyfish on National Geographic show, I reflected on making my meal as beautiful as this creature. I make mine meal with minced pork and vegetables.
Today, my meal is simple easy yet as beautiful as the jellyfish swimming in the ocean with its body shone against the black water; like my minced pork and vegetables shine against the sauces. It’s a meal that we have almost every week. We never grown out of it. It’s a comfort meal that have been going on from generation to generation.
As the years goes by, so too the ingredients in the actual traditional cooking handed down by the older generation. Well, it’s still taste great with a few ingredients. Keep it simple, taste flavourful, and elegant on my blue bowl that represent the ocean. Be grateful to have a bowl of comfort meal.
Bean, carrot minced pork is the main attraction; it flavoured with oyster sauce, soy sauce, fish sauce, lemon juice and sugar. Then broccolini is added as extra green vegetable intake, brighten the meal and serve with rice. Let’s cook!!!!
Ingredients
500 g minced pork, marinade with 1/2 Tsp of all the sauce, for 1 hour
200 g green beans, cut into bite sauce
200 g carrots cut into matchsticks
2 bunches broccolini, cut into bite size
2 Tsp fish sauce
3 Tbs oyster sauce, divided
3-5 Tbs soy sauce, divided
1 Tbs Chinese cooking wine (OPT)
2 – 2 1/2 Tbs lemon juice
2 – 2 1/2 Tbs sugar
1 Tsp cornflour mix with 3-5 Tbs of water
3 Tsp garlic minced, divided

Method
Marinade minced pork with the sauces and put in fridge for 1 hour. Just before cooking it with beans and carrots, cook rice in rice cooker. Bring minced pork to room temperature before cooking.
Heat oil in wok on medium heat, once heated add 1 1/2 Tsp garlic fry until soften. Add minced pork, fry for about 5-7 minutes until brown all over. Now add carrots and cook further 3 minutes. Next add bean and toss around to cook for 4 minutes. When pork and vegetables are cooked through add in all the sauces; 1 1/12 Tbs soy sauce and 1 1/1/2 Tbs oyster sauce, juice, sugar, cornflour mixture and pepper. Taste the seasoning. Spoon on to serving plate.
Wash the wok, add oil on medium heat. Add the remaining garlic until soften. Add broccolini, the remaining oyster sauce, soy sauce, salt, pepper and toss around cook for about 7 minutes or until cooked. Spoon on to serving plate. By now the rice is cooked.
Plate up cooked followed by bean carrot minced pork on the side top corner and then the stir fry broccolini on to serving individual serving bowls. Enjoy!!!!!
Note: You can add mushrooms, and parsley into bean carrot minced pork. You can add in cut chili. For the broccolini you can add in minced pork.
