Since I have been spending more time at home, Its a pleasure to have abundant of delicious recipes to explore, create and of course to eat. So, here’s my another creation recipe to share with you. Cosy up and beat winter chill with chocolate, fruits, shredded coconut, mushroom, and seasonal veggies.
Yes, chocolate I am not feeling guilty at all. Lightly toast shredded coconut to give it some crunch goes hand in hand with salad. Take my healthy lunch to next level of creation. It’s so easy to create the chocolate and turn it into a cup and filled with blueberries and shredded coconut with a little cute strawberry flower on top.
No hassle preparing. For chocolate; you can made them in advance store in freezer the night before. The next day, just create your chocolate mould with anything you like. Let’s assemble them so I can eat. This is colourful, healthy and delicious salad anyone can make. Be creative!!!!
180 g melting chocolate, melted
1 Tsp oil
Salad and dressing Ingredients
4 slices of mushrooms
3 cherries tomatoes, cut into halves
1 strawberry, cut into flower shape
40 g baby rocket, wash, and dry
40 g shredded coconut, lightly toast brown
25 g blueberries, for chocolate and salad
1 stalk basil leaves only
To do one day in advance
Melt chocolate in a bowl over a pot of water. Once melted add oil, and give a stir to mix well. When cool slightly pour into the chocolate moulds – 2 halves cup. Place in freezer to set. The next day remove from freezer and moulds.
The following day
Place baby rocket, cherries, blueberries, mushrooms, basil leaves in a bowl; toss with oil, balsamic vinegar, salt and pepper. Then plate up on to plate. Make a small hole in the middle of the salad. Then remove chocolate from freezer and the mould.
Put the chocolate mould in the middle of salad. Next place the mushrooms and some blueberries to support the mould. Place remaining blueberries and shredded coconut inside. Top with strawberry flower. Sprinkle remaining shredded coconut over the salad. Enjoy!!!!
Note: You can omit the chocolate and use any fruits of your choice. You can add meat, or seafood. You can use salad mix. This recipe is for one. For more people add more amount for the ingredients.
