Beef balls vegetables lentil soup

I have some leftovers vegetables and uncooked can lentil in the fridge. Then there’s some leftovers uncooked beef minced in freezer. As it’s a cold day. I thought this will keep me warm.

Wouldn’t you like to have a comforting bowl of soup to keep you warm? It is also a hearty and satisfying soup that you can ever get that would put a smile on your face and soothing for your soul.

This bowl of added minced beef ,vegetables, and lentil is great, simple, easy to turn it into a new delicious and comforting meal for cold day. Let’s cook!!!!

250 g minced beef
1 stalk celery, chopped finely
1 small carrot, chopped finely
1 egg
6 cherries tomatoes, crushed
3 stalks kale, tear the leaves to bite size
3 stalks asparagus, cut into bite size
3 small carrots, cut into bite size
1/2 green capsicum, cut into bite size
1/2 onion, chopped
1/4 cabbage, cut into bite size
1/8 parsley, finely chopped
200 g lentil from the can, washed and drained
150 g breadcrumbs
3 c vegetables stock
1 c Prosecco
2 Tbs olive oil
2 Tsp paprika
1 1/2 Tsp garlic minced, plus extra for balls
1 Tsp cumin
1 Tsp sea salt, plus extra for balls
1/2 Tsp pepper, plus extra for balls
Dash of Worcester sauce, extra for balls (OPT)


Put a pot with water and a bit of salt on med high heat, to boil. In the meantime, add to a separate bowl minced beef, chopped celery, 1 carrot, parsley, salt, pepper, garlic, Worcester, bread crumbs and egg. Mixing well and then use clean hand combine and make a balls and place on a plate until all the minced beef mixture finished.

Gently drop each ball into the boiling water, make sure not to crowd them. Cook it for 7 minutes. Remove and place on plate cover with foil. Set aside.

Heat oil in bigger pot over medium heat. Add onion, and garlic until translucent. Then add carrots, kale, asparagus and cabbage cook for about 5 minutes. Now add paprika, cumin, salt and pepper; stir.

Next lentil, Prosecco and crushed cherries tomatoes. Stir to mix well. Add stock and dash Worcester sauce, stir again to mix well and cover with lid; bring to simmer about 20 minutes. Reduce heat to low simmer, now add in the precooked balls, stir to mix well and simmer for about 10 minutes until balls are cooked properly and lentil is soft and tender.

Taste for seasoning and adjust with salt and pepper. Serve with a glass of Prosecco. Enjoy!!!!

Note: you can add celery, red capsicum, spinach, fresh herbs or dried. Even ground meat, chillies or hot sauce. You can add arborio rice or pasta.
