
Found my favourite instant noodles: Pan mee today. I am adding my leftover fried onion egg and bought a bunch of choy sum. This is a simple lunch. I know eating too much instant noodles do contains msg. Well, I am adding healthy vegetables and fried egg with it.

Ingredients
1 packet pan mee instant noodles soup
water
Fried choy sum
1 bunch of choy sum, cut into bite size
1 Tbs oil
1 Tbs garlic minced
1 Tbs Sha Xing Chinese cooking wine
1 Tsp soy sauce
salt
pepper
water
Fried onion egg
3-4 eggs
1 onion, sliced
1 Tbs oil
salt
pepper
Method
Fried onion egg
Heat oil to medium-high heat in a saucepan. As oil begins to shimmer in the pan, add onions and cook 3-4 minutes until slightly caramelized, stirring often to brown evenly. While onions sizzle, add eggs to a bowl and whisk until yolks and whites are combined.
Add eggs to onions in the saucepan, season with salt and lower heat to medium-low. Gently push the egg from the outer edges of saucepan towards the center of the pan with a spatula, softly creating large folds as you go along all sides of the pan.
Tilt saucepan if necessary to force liquid egg to the outer edges of saucepan and repeat creating folds towards the center. Do this for 2-3 minutes until eggs are cooked to desired doneness. Avoid the urge to turn the heat up at any point to avoid burning the bottom of the eggs. Turn heat off and top eggs with pepper. Transfer to a plate, cover with a foil tent.
Fried choy sum
Bring a large pot of water to boil. Add the chopped choy sum and cook until bright green, about 40 seconds. Drain well. Use the same saucepan, wipe the saucepan with paper towel. Heat oil over medium heat, once hot, add garlic and stir-fry until fragrant, about 30 seconds. Add the choy sum, stir, and season with a few pinches of salt.
Continue to cook while stirring regularly for about 2 minutes. Add soy sauce, 2 Tbs water and combine it with the choy sum for another 1 minute. Next add Shao Xing Chinese cooking wine, and toss to mixed well for 1-2 minutes. Season to taste with more salt and pepper as desired. Transfer to a serving platter and cover with foil tent.
Cook pan mee
Put kettle on. Open the pan mee packet, empty the pan mee and condiments that comes with it into a bowl. Once the water boil, pour enough water into bowl with pan mee. Microwave pan mee for 6-8 minutes. In the last 2 minutes, add cooked choy sum around the pan mee soup. Then place fried onion egg on top. Continue to cook until time up. Pan mee is softened and cooked. Bring out carefully from microwave. Enjoy!!!
