Penne vegetables in mushroom soup

You can create food from your pantry and what you have in fridge. Here’s my creation and colourful meal. It can be vegetarian meal or better still Meatless Monday meal.

You can make your own creation, pasta and broth that you have at home. I bought penne, mushroom soup and use vegetables from my fridge. It’s handy, easy, simple hearty and delicious meal that you can put on the table. Let’s cook!!!

Ingredients


300 g penne pasta
1 can mushroom soup
1/2 red capsicum, cut into bite size
1/2 yellow capsicum, cut into bite size
1 medium carrot, cut into bite size
1/2 zucchini, cut into pieces
6 cherries tomatoes, halves
salt
pepper
chili flakes, (OPT)

Method

Put penne in microwave safe bowl with water and a pinch of salt, cook on high for 12 minutes. Meantime, pour can mushroom into a pot and bring it to simmer, about 10 minutes. After 12 minutes, stop the microwave, add carrots, and zucchini into bowl with penne to continue cooking penne with vegetables for further 6 minutes.

Once penne is al dente. Vegetables are soft and cooked. Drain and spoon penne and vegetables into the mushroom soup. Mix in well and add cherries. Bring pot to warm up about 5 minutes until cherries is soft. Season with salt and pepper to taste. Spoon penne vegetables in mushroom soup into individual bowl and sprinkle chili flakes. Serve with a glass of white wine.
