
Midweek lunch is quick simple and can be canned food or packet noodles soup. Today, I craved for bread roll and spam meat. When to a supermarket nearby to get spam meat, bread rolls, lettuce and on my way out heading to the cashier, this pane di casa caught my attention, will use it one day with spam meat. It’s on sale. I grab it.

I am adding asparagus cucumber green capsicum pureed, which I had made three days ago. Best finished it off. My lunch is colourful, comforting and delicious. Let’s make lunch!!!
Ingredients
2 canned spam meat
6 bread rolls
lettuce
sliced black olives
butter or margarine
chili sauce or tomato sauce
asparagus cucumber green capsicum and olive puree, leftovers (See Note)
oil
Method
Cut the spam meat lengthwise into 8 equal slices. Slice them as thick or thinly as you would like, then simply place them in to the saucepan. In a large saucepan add a tiny drop of oil on medium heat. Then swirl the oil around the saucepan.
Cook the spam meat slices for 3-5 minutes or until caramelized, flipping halfway through; do not overcrowd them. Meanwhile, butter the bread rolls. Once the spam meat is heated and caramelised, transfer it to a plate lined with paper towels. Assemble by placing the bottom half of the bread roll on each plate. Then, place some lettuce on top of the bottom part of the bread roll, followed by 1 slice of spam meat on top. Squirt 4 dots of chili sauce or tomato sauce and spoon some asparagus cucumber green olives over the spam meat.
Place some more lettuce on top and followed by the second slice of spam meat. Next add sliced black olives on top of spam meat. Place the top half bread roll on top. Enjoy with a cup of tea!!
Note: You can use pane de casa or normal bread instead of bread rolls. You can use corned beef instead of spam meat. You can add an egg sunny side up. You can add rocket leaves, spinach leaves, cucumbers, carrots and beetroots.
To make asparagus cucumber green capsicum and olive puree:
4 stalks asparagus
3 pitted green olives
1/4 cucumber
1/2 green capsicum
1/8 c water
lime juice
Method
Put asparagus in a microwave-safe bowl with enough water, microwave until tender, about 6 minutes. Let it cool completely and cut into bite sized pieces. Then add it into a Nutri Bullet with pitted olives, cucumber, green capsicum, water, and a drop or two of lime juice. Blend until it’s well blended or becomes a puree. Keep in a sterile bottle or a jug with lid.
