I trust everyone will try make this cake perhaps yours will be super extra perfect!!! If you never try you will never know that you can bake. You don’t have to be a professional baker to bake an easy simply and great cake.
I am glad I tried it from scratch as I craved for mocha. This is delicious moist cake. Enjoy and Happy baking!!!!!
180 g butter
175 g caster sugar
200-220 g self-raising flour
35-50 g cocoa powder
75 ml hot water mixed with 2 Tsp instant coffee granules
15 ml milk
1 Tsp baking powder
80 g blueberries
60 g dark melting chocolate
30 g white melting chocolate
Strawberry jam (Opt)
Preheat the oven to 180 degrees C. Grease and line bottom small square tin.
Beat butter and sugar until pale and fluffy for 5 minutes. Add in eggs one at a time, beat well. Now add in cool coffee and milk, stir in to mix well. Sieve in flour, baking powder and cocoa powder. Combine well until you get the right consistency.
Pour into prepared tin. Gently press in dark chocolate alternate with white chocolate and blueberries. Bake for 60-65 minutes. Skewer comes out clean then cake is done.
Leave in switch off oven for 30 minutes. Then remove from oven and stand on rack for 10 minutes. Next remove tin and place in the cake base, spread strawberry jam on top to gives a glossy top. Serve with strong brewed coffee.
Note: You may need less or more time as oven temperature vary. You make bake your own mocha with other flavour like extra strength coffee, Kahlua, peppermint, 70% dark chocolate only. I added the white as I have leftovers. You may omit blueberries.
