On a cold and wet day, shivering what more to keep warm. Ah Huh! Spicy meal will do. So, I experiment on spices combination. Many would have most of these spices in their pantry as in my ingredients below.
I believe these spices are from South Asian, Indian and Middle East. Most spices gives flavour in your palate with each mouthful. Flavour of the world I would say, you are going to say its flavour overload, Helen.
Yes, indeed its complete this glorious meal with spiciness is magnificent and satisfying. At last, I am feeling warm again!!!!!
4 pork loins fillets, washed and pat dry
6 Tbs XO chilli oil, extra for drizzle (given by friend)
2 Tbs dried oregano
2 Tsp chilli powder
2 Tsp garlic powder
2 Tsp ginger powder
2 Tsp cayenne powder
2 Tsp cumin powder
1 Tsp nutmeg powder
1 Tsp sweet paprika powder
1 Tsp coriander powder
1 Tsp Moroccan spiced
4 kumato, cut into wedges
250 g peeled cubed washed dried pumpkins
200 g green beans, cut into bite size, washed
Salt and black pepper to taste
Water for boiling beans
Preheat the oven 200 degree C.
In a bowl, mix together XO chilli oil, chilli powder, coriander, cumin, garlic, oregano, ginger, cayenne, Moroccan, nutmeg, salt, pepper and sweet paprika. Marinade XO chilli oil mixture all over pork for 30 minutes; place in foiled tray and refrigerate until needed.
Meantime, cut peel wash and cube pumpkins. Then cut kumato into wedges. Marinade pumpkins with the remaining XO chilli oil mixture. Season kumato with salt and pepper.
Allow pork to be in room temperature for 10 minutes before putting in oven. In another foiled tray place pumpkins and kumato and put in oven for 15-18 minutes. Now place pork in oven and roast about 12-14 minutes until pork is cooked. Turn half way through.
Cut into bite size beans and microwave for 10-12 minutes until soft and tender, drain and set aside covered with foil. Remove pork and rest for 10 minutes.
Arrange 2 pork each in the centre of plate with roasted vegetables on both side and place beans on top. Serve Peroni Nastro Azzuro cool beer.
Note: Oven temperature vary. You may need more or less time. Microwave temperature and cooking time vary too. Check out yours. Pumpkins can be parboiled first, drain and marinade then roast. I just put straight into oven after marinade.
