2 skin on and boneless salmon, cut into half lengthwise
1 packet of mixed salad, washed and drained
1 packets of medley tomatoes, washed and drained
1 bunch broccolini, cut into bite size
2-4 Tbs oil
a few shakes of cayenne powder
Pre heat grill, line tray with foil. Place broccolini in a microwave safe bowl with water and cook for 7-9 minutes until cooked through, tender. Drain and plate it, cover with foil.
Rub some oil, salt, pepper and shakes cayenne on to salmon. Place in the foiled tray with tomatoes that is in grill for 2-3 minutes already. Grill salmon for 5-7 minutes until light pink or to your liking and tomatoes have cooked through.
Distribute the salad on to plate. Once salmon done, plate the salmon on the side of the salad with boiled broccolini and tomatoes. Drizzle with the juice and dripping oil from salmon and tomatoes. Serve with sweet white wine.
Note: Grill might vary. Just observe tomatoes doesn’t burn and salmon to your liking. I had my salmon with a glass of Moscato wine.
