
I have recreated this dish from Maria Nasir, a food blogger from Google+. Her link is at the bottom. It’s a simple vegetarian meal. I love to eat eggplant. So, I search for recipes on google. Found that Maria Nasir recipe suit to me.
This is a simple hearty delicious meal. It’s suit vegetarian lovers as well as it can be Monday meatless day or any day for you prefer to have more vegetables than meat. I know it can be eaten anytime too. I have added caramelised onions and XO chilli sauce so that I can call it my own. Let’s cook!!!
Ingredients:
1 large round eggplant
1 large sweet potato, washed and dry
250 g cherries tomatoes
1/4 cup matured black vinegar
1/4 cup soy sauce
1 Tsp English mustard
2 Tbs light brown sugar
1 Tsp ginger powder
1 Tsp garlic powder
1/2 Tsp cinnamon powder
2 Tsp chilli powder
1/2 Tsp black pepper
salt to taste
2-4 Tsp XO chilli sauce (given by friend)
4-6 Tsp caramelised onions (bought)
2 Tbs corn flour
Oil to brush
Spray oil
Method
Preheat oven 180 deg C. Spray oil on foil lined oven tray. Remove stems and cut eggplants into 1/2 inch thick slices. Sprinkle with a little salt, leave to sweat for 20 minutes. Rinse after sweat and pat dry the eggplants. Microwave sweet potatoes for about 18-20 minutes, drained set aside until ready to use.
Next add together all the ingredients, except corn flour, XO chilli sauce, caramelised onions and oil, in a deep dish. Marinade the eggplants. Refrigerate for 20 minutes. Remove eggplant from marinade. Place eggplants on oil based prepared baking tray in a single layer. Spray oil on both side of eggplants. Bake till the eggplants are tender and browned nicely about 30 minutes. Turn over the other side after 15 minutes.
Place cherries and sweet potatoes in another oil spray baking tray. Bake till tender and cooked about 25-30 minutes. Remove both tray from oven and plate them on 4 plates. Serve eggplant steaks hot, spoons caramelised onions over eggplant steaks and serve with drizzle XO sauce on cherries tomatoes and sweet potatoes.
Note: Oven temperature vary. You might need less time or more. You can grill like the original recipe or pan fry. I don’t bother to peel skins; you might want to peel it. You might want reserve the marinade to serve it with the steaks and vegetables. You can serve with salad instead.
