
Felt like having red meat. Went to get some steaks and bought sundried capsicum. Got eggplant, cucumber and cherries tomatoes that is about to expired.
A simple no hassle meal. Not much of spice just rosemary homegrown. It’s a lazy method. You would at time felt lazy to cook yet you needed to eat.
The presentation doesn’t stand up. The taste is yummy, and at least I got red meat to eat.
Ingredients
4 rump steaks
1 egg plant, cut into chips shapes
1 cucumber, cut into bite size
1 punnet of cherries tomatoes
2 large carrots, cut into chips shapes
190 g of sun dried capsicum (bought)
mayonnaise
fresh rosemary
salt
pepper
olive oil
Method
Preheat oven 180 degree C. Marinade steaks with salt, pepper, rosemary and oil for 1 hour. Cut the eggplant, season with salt and pepper. Drizzle oil. Place them in an oil foiled tray, bake for 12 minutes then grill for 5-7 minutes, charred and caramelised.
In another tray place steaks and roast for 18-25 minutes. Turn over after 8 – 12 minutes. I prefer medium done to well done. Meanwhile, cut cucumber to bite size and carrot to chips shape.
Plate them with cherries, cucumbers, mayo carrots followed by steak. Place sun dried capsicum on top of steak and drizzle some oil from tray and capsicum. Serve with a glass of red wine.
Note: Oven varies and time. Also, how you like your meat to be.
