What to do with leftover from Christmas and New Year celebration? Well, try this simple recipe. No hassle in the kitchen. You surely have got leftover vanilla custard, smoked salmon, and glazed cherries. Right?

I only add new fresh ingredient like blinis and got it on sale. These is my trial and error using all leftovers. I am pleased that it turnout perfect delicious. Let’s bake!!!!

Ingredients

2 eggs
8 finely cut chives
50 g grated Granada Prada cheese
25 g Parmesan cheese
1/2 Tbs mustard
1/8 c vanilla custard
1 slice of smoked cooked ham (use leftover from Christmas: Cider and marmalade glazed ham)
25 g smoked salmon
10 -12 blinis (mini pancakes)
salt
black pepper
7 glazed cherries

Method

Pre heat oven 180 degrees C. In a bowl, crack egg and add mustard, and custard; whisk them well to incorporate the mixture. Then add chives, ham and smoked salmon, whisk again to combined. Season well. Set aside until needed.

Line blinis in the small round oven proof dish. Pour the egg mixture over the blinis. Top it with glazed cherries around it.

Bake for about 30-40 minutes until top are golden brown and cooked. To check by inserting skewer or butter knife; comes out clean then it’s done. Serve immediately with side salad or eat on its own.

Note: Oven may vary in temp. You might bake it at 25 minutes first if skewer comes out wet; add another 10 minutes.
