Do you at time have cravings for cake? It’s not a guilty to have a cake. Everyone will be craving for something in life. If you do have cake cravings; it’s great that you can bake cake. If you, can’t it’s going to cost you an arm and a leg. Nowadays, cake shops are selling very expensive.

I have a confession I do craves for cake every once in two weeks. Today, I felt like having carrots and yoghurt cake. So, I bake carrots and passion fruits yoghurt cake. You are going to asks why not walnuts.

Well, I don’t have walnuts in my pantry but I do have passion fruits pulp. For a change of flavour, I have chosen passion fruits pulp. The cake is moist from yoghurt and passion fruits pulp. It’s crunched a bit from carrots.

I don’t want to glaze the cake. I just wanted it to be plain looking but tasty delicious cake. Let’s get creative baking to curb the cravings!!!!

Ingredients

270 g plain flour, sifted
2 tsp baking powder
1/2 tsp salt
500 g Natural plain yogurt
170 g passion fruits pulp
215 g castor sugar
3 extra-large eggs
1/2 Tsp vanilla essence
1/2 cup vegetable oil
8 medium carrots, grated

Method

Preheat the oven to 180 deg C. Grease and flour the ring pan. Sift together flour, baking powder, and salt into a bowl. Using electric blender, blend together the yogurt, passion fruits, sugar, eggs, vanilla, and oil.

Slowly blend the dry ingredients into the wet ingredients. Mix the carrots gently into the batter. Pour the batter into the prepared tube pan and bake for about 1 hour 30 minutes – 1 hour 40 minutes, or until a cake tester placed in the center comes out a little clean (might have a bit of moist as its yoghurt).

When the cake is done, allow it to cool in the pan for 10 minutes before flipping out onto a foil base board to cool completely. Serve this cake with brewed coffee or English breakfast tea.

Note: oven temperature may vary. You might need less or more time. You may want to use spring form tin 24 cm. Instead of passion fruits pulp you can use walnuts. You can decorate your cake with butter cream or decorate it with whipped cream and more chopped walnuts.
