Have some leftover of the Portuguese Pao De long cake. Decided to make a trifle. Google: “Trifle is a layered dessert of English origin. The usual ingredients are a thin layer of sponge fingers or sponge cake soaked in sherry or another fortified wine, a fruit element (fresh or jelly), custard and whipped cream layered in that ascending order in a glass dish. The contents of a trifle are highly variable and many varieties exist, some forgoing fruit entirely and instead using other ingredients, such as chocolate, coffee or vanilla. The fruit and sponge layers may be suspended in fruit-flavoured jelly, and these ingredients are usually arranged to produce three or four layers. The assembled dessert can be topped with whipped cream or, more traditionally, syllabub.”
Google: “In Italy, a dessert similar to and probably based on trifle is known as zuppa inglese, literally “English soup”. Tiramisù is prepared similarly to trifle, but it does not include fruits and the original recipe calls for the savoiardi (ladyfingers) to be dipped in coffee rather than spirits.”
I am serving it with custard and fruits. Glad to finished off the few pieces of this sponge cake. I have written down the Portuguese Pao De long recipe below. It was delicious.
Ingredients
9 eggs
1 1/2 cups castor sugar
1 2/3 cups plain flour
1/4 Tsp baking powder
A pinch of salt
Half orange zest
2 Tbsp orange juice to glazed
A punnet of strawberries to decorate
Method
Preheat oven to 180 deg C. Grease and flour the bottom only of a 9-inch tube pan. Beat egg with salt until light. Gradually add the sugar, beat at med speed 20-25 minutes until very light lemon coloured. Add in orange zest.
Sift the flour with the baking powder and mix well. At low speed, whisk the flour to egg mixture one Tbs at a time; whisking well each addition; scrapping off the side if needed. Pour into the pan bake approximately 40 mins or until cake stick insert into cake comes out clean. Let cool for 10 minutes then remove from pan.
The next day- leftovers
After a day old cut it into cake serving portion, soak it in 5 Tbs orange juice; not too soggy then place in the dessert bowl with some vanilla custard and 1 Tsp orange blossom juice then followed by whipped cream and decorate with strawberries and blackberries. Then sprinkle chocolate powder. Serve with port, tawny, or short black espresso. Enjoy!!!
