Baked barramundi with cream

Use barramundi and filo pastry instead of potatoes. Made by Helen.

I watched TV cooking program of goodchefbadchef a few month ago, they were baking salted cod with cream. As cod here are so expensive and I couldn’t find the salted cod. I have change it using barramundi as it’s cheaper and frozen.

I as usual change the ingredients to suit me and my budget. I am also trying out to see for myself what will my creation turned out. Like to explore with different ingredients and proof myself I can make a dish just like any chef.

I am glad to say it’s delicious, beautiful, comforting and worth my experimenting with different ingredients. Be courage to try out with your own creation. Let’s bake!!!

Ingredients

300 g Barramundi frozen and package, cut into rough pieces
1/2 cup olive oil
4-5 cloves garlic
1 large onion
1 leek, finely chopped
1 bunch kale, chopped
300 ml thickened cream
180 g feta cheese
100 g haloumi cheese
100 g Parmesan cheese
4 eggs
4 to 6 pieces filo pastry, bought
butter for greasing baking dish
2 stalks spring onions, chopped
4 stalks thyme, chopped
salt
pepper

Method

Pre-heated 200C. Thaw the barramundi. Add olive oil to hot pan. Cook onions, garlic and leek. Season with a little salt. Add kale, spring onion and thyme to the pan and season with pepper. Cook kale until tender soft about 10 mins. Then add barramundi cook for a few minutes.

Lightly beat the eggs in a bowl, add the cream and whisk together. Add the mixture from the pan into the bowl and mix together. Transfer cooked ingredients into the grease baking dish and lined with filo pastry. Scatter feta, haloumi and Parmesan cheese. Place in oven 25-35 minutes until filo is lightly brown and cheeses melted. Enjoy!!!!
