Pan mee roast chicken mushroom cos lettuce soup

Bought pan mee soup instant packet; in the packet, it has 5 individual packets, sliced mushrooms, cos lettuce, and roast chicken. This is my second favourite instant noodle apart from Shin ram yun noodles. I didn’t feel like cooking today, but my stomach is starting to growl. I decided to make a quick dinner with no hassle of lots of utensils to wash.

“Pan Mee soup is a renowned Malaysian-Chinese Hakka dish made of flat flour noodles served in a savoury anchovy broth, typically topped with minced pork, crispy anchovies, mushrooms, and leafy greens, offering a comforting flavour and chewy texture. Each serving provides a balanced meal with 31g of protein and nutritious greens, while the traditional soup base uses ikan bilis (sun-dried anchovies), rich in calcium, which supports bone strength and heart health.”

“Cos lettuce, or Romaine, is a nutritious, low-calorie leafy green rich in vitamins A, K, C, folate, potassium, and antioxidants. It supports heart health, bone strength, and hydration, while beta-carotene promotes eye health and immunity. Additionally, its antioxidants help regulate blood pressure and lower cardiovascular disease risk.”

As you know me by now, I am a fan of chili. I have added my garlic chili onion sauce to the soup. My simple meal of spicy flavoured is comforting, satisfaction, and delicious. Let’s cook!!!

Ingredients

1 packet of pan mee soup
2 pieces of roast chicken, bought
1/2 Tbs garlic chili onion sauce
2-3 cos lettuce leaves
some sliced mushrooms
water
1/2 Tbs garlic chili onion sauce

Method

Put the kettle on. Open the pan mee and condiments and empty them into a bowl with a plate at the bottom for easy to carry out from microwave later. Wash cos lettuce leaves, and cut to bite size and place with pan mee and condiment in the prepared bowl.

Next put some sliced mushrooms into the prepared bowl. When water is boiled, add enough water into the prepared bowl with pan mee, condiments, roast chicken pieces, cos lettuce leaves, and 1/2 Tbs garlic chili onion sauce. Give a stir or two. Then place into microwave.

Microwave for 5-7 minutes until pan mee until cooked, roast chicken pieces are warmed up, cos lettuce leaves wilted, and mushrooms is softened. Garnish with 1/2 Tbs of garlic chili onion sauce and serve immediately with a cup of tea. Enjoy!!!
