
With leftover a few pieces of the Zucchini chocolate cake with sprinkles chocolate and ganache. I am turning it into pudding with all leftovers of strawberries, cream, salted caramel and ice cream. Then garnish with chocolate sprinkles.

Yesterday, I made a make for my nephew using zucchini. The link to Zucchini chocolate cake with sprinkles chocolate and ganache is attached at the bottom. I am glad to finish off all the leftovers and created a colourful pudding. Let’s make pudding!!!
Ingredients
leftover few pieces of Zucchini chocolate cake with sprinkles chocolate and ganache
4 strawberries, stems removed, cut into wedges
15 ml rum
ice cream
chocolate sprinkles
whipped cream, bought
Salted caramel
20 g butter
150 g brown sugar
20 ml thickened cream
100 ml plum liqueur
2 Tsp lime juice
1 1/4 Tsp sea salt
Method
Salted caramel
Place butter in pot on medium heat. Add sugar and salt, don’t stir just swirl the pot until sugar is dissolve. Now add in thickened cream and liqueur; it will splatter so turn to low heat. When it has settled down add in juice. Set aside to cool about 30 minutes. When it has cool completely keep it in a sterilize bottle to add to other dessert.
To assemble glass
In a shallow plate, pour some rum on to it, add the few pieces of Zucchini chocolate cake with sprinkles chocolate and ganache, let the rum absorb into the cake pieces. Place them into the glass, followed by strawberry wedges. Dollop some salted caramel over the top of strawberry wedges. I place in the fridge to chilled it for 30 minutes. You don’t have to chill.
Just before serving, spray the bought whipped cream, sprinkle some chocolate sprinkles over the whipped cream. Now scoop the ice cream and place it on top. Sprinkle more chocolate sprinkles over the ice cream. Enjoy!!!
