
Went to supermarket with intention to buy salmon pieces to cook in my air fryer instead I came back with 2 packets of frozen basa fillets that are on sale. Then remembered I have breadcrumbs and decided to crumb basa fillet to go with my salads that I bought 2 days ago. Making 14 basa fillets logs as a trial and error experiment. Don’t like wasting food.
“Basa fillets, from the Pangasius bocourti species, are a mild-flavoured, flaky white fish that is high in protein, low in calories, and affordable. They support weight management and heart health, provide all essential amino acids for muscle growth, and contain beneficial omega-3 fatty acids. Additionally, they are rich in vitamin B12 for nerve and brain function, as well as important minerals like selenium, potassium, and iron.”
I am adding extra ingredients to crumbed it; got to have a hint of spiciness. I managed to take the picture of my basa crumbed log but so trilled and hungry, I piled my plate with my salad, drizzle oil and chili sauce. Then pop 4 basa crumbed logs on the side, and eat straight away; only to realised I forgot to take the picture of my plate. Let’s cook!!!
Ingredients
14 frozen basa fillets, thawed, and cut the ends
1 1/2 c breadcrumbs
1/2-3/4 c plain flour
3 eggs
5 Tbs Parmesan cheese
4 Tsp cayenne powder
2 Tsp Italian Seasoning (OPT)
2 Tsp garlic powder
2 Tsp onion powder
1 Tsp baking powder
1 Tsp salt, plus extra for seasoning fish
ground pepper, plus extra for seasoning fish
3-5 Tbs butter or spray oil
Method
Preheat oven to 220C. Line a baking tray with baking paper and put in the oven to heat up. Place breadcrumbs in a non-stick frying pan over medium-high heat. Cook, stirring, for 3 minutes or until toasted. Transfer to a shallow dish. Allow to cool. Meantime, rinse fish and pat dry with paper towels to ensure the coating sticks.
Use three shallow plates—one for flour, cayenne powder, garlic powder, onion powder, baking powder, 1 Tsp salt, and 1 Tsp pepper; one for eggs, and one for breadcrumbs with parmesan, and Italian Seasoning. Dip each fillet logs into seasoned flour, then into a beaten egg mixture, and finally press into breadcrumbs. Season with salt, and pepper.
Bring out the lined pan carefully with mitten as it’s hot. Lined the crumbed basa fillet logs, 5 in a rows then another 5 in another row and the last 4 above the second rows in 2 and bottom another 2 more. Then spray with olive oil spray for a crispy texture. Bake for 10 minutes. Flip over, spray oil and continue baking a further 5-10 minutes or until coating is crispy and fish is cooked through. Turn to grill and place basa fillet logs in the grill mode for 2-3 minutes. Remove from grill and let fillet rest on the pan for 5 minutes, then serve immediately with salad and a glass of Piot Grigg. Enjoy!!!
