
My father gave me 2 cooked bacon strips that he doesn’t want to eat anymore. I decided to use my leftover lettuce and one egg. Some days, simple meals are satisfactory.

Ingredients
2 cooked bacon strips, from my dad
2 slices of bread
1 egg
leftover lettuces
butter
oil
salt
pepper
Method
Heat a pan over low heat. When pan is warm, add a Tbs oil. Allow oil to heat up. Crack egg and gently drop egg into pan over oil; be careful oil will splatter. Sprinkle with a bit of salt and pepper. Let the eggs sit undisturbed for about 15–20 seconds to allow the edges to set.
Using a silicone spatula, gently break the yolks and drag the set egg from the outer edges toward the center. Then push, tilt the pan to allow the raw, runny egg to fill the empty space. Continue pushing the cooked, set egg into the uncooked area in a circular motion until the egg is just set but still looks glossy and wet. Remove immediately from the heat; the eggs will continue to cook.
Meantime, butter both the slices of bread. Place one slice on the plate. Next add the leftover lettuce. Open the cling wrap a bit and put bacon on a plate in microwave. Heat 30 seconds at interval until heated up hot. Now place bacon on top of lettuce. followed by the egg. Next the other slice of bread leaned over the filled up slice of bread. Enjoy with a cup of coffee or tea!!!
