
It has been pouring heavily almost every day. Just didn’t want to get out to get food and I have some minced pork, onion and a bottle of sambal olek sauce in my pantry.
Sambal is a popular Southeast Asian, primarily Indonesian and Malaysian, chili-based condiment made from ground chilies and aromatics: garlic, shallots, shrimp paste, lime juice, or sugar. It has a spicy, pungent, savoury, and often umami-rich flavour. It can be served raw: sambal matah or cooked: sambal tumis. There are a few varieties: sambal olek with raw red chili paste and sambal terasi with shrimp paste. The capsaicin in chili peppers is known to increase metabolism, aiding in weight management. It contains vitamins A and C, and antioxidants that help fight free radicals. Garlic and ginger for immune boosting properties. Tamarind aid digestion, capsaicin for pain relieving.”
Pork is versatile, can be cooked in many ways as well as can be added with most vegetables. I am just loving pork minced as it can also be added to noodles the next day. I am glad to be able to have food for the next few days. This a simple spicy, healthy meal with rice, today. Let’s cook!!!
Ingredients
500 g minced pork
1/2 small onion, sliced
4 Tbs oil
3-5 Tbs sambal olek sauce
2-4 Tbs Shoa Xing Chinese cooking wine
2 Tbs light soy sauce
2 Tbs oyster sauce
1 Tbs minced garlic
1 Tbs corn flour
2 Tsp ginger powder
white pepper
a pinch of salt (OPT)
water
Method
Heat pan on medium heat add 4 Tbs oil. Once oil is hot, add garlic, onion, and ginger powder cook until fragrant about 1 minute. Add pork, and break up as you cook it. Add soy sauce, oyster sauce and pepper. Continue to toss around until it browned and pork is cooked about 5-7 minutes.
Next, add the 3 Tbs sambal olek and cook for 2 minutes. Now add in about 1/8 cup of water and Shaoxing, mixing well for about 3 minutes. Next, mix cornflour with 4 Tbs of water in a cup until there are no lumps. Then, pour this mixture into sambal minced pork. Give it a couple of stirs. Check the seasoning; if needed, add salt. Spoon onto serving bowl and serve with rice and a glass of red wine. Enjoy!!!!!
Note: I have added 2 more Tbs sambal olek as I am a chili fan. You don’t have to. You can use 2 Tbs sambal olek if you don’t like it too spicy.
