Shin ram yun chicken pieces prawns baby spinach cherry tomatoes with spring onion noodles soup

Bought my favourite noodles, chicken breast, cherry tomatoes, and baby spinach on sale. My dinner tonight is noodles as it’s pouring heavy rain. Needed soup meal.

Ingredients

Chicken, prawns, and marinade

1 chicken breast, cut into bite size
4 peeled deveined prawns
1 lemon juice
1 Tbs sugar
1 Tbs Shoa Xing, Chinese cooking wine
1 Tsp soy sauce
1 Tsp sesame oil
1 tsp minced garlic
oil to cook
salt
pepper

Shin ram yun noodles, cherry tomatoes, and baby spinach

1 packet Shin ram yun noodles
4 cherry tomatoes
1-2 stalks spring onion, wash and cut
1/8 onion slices
baby spinach
water

Method

Do the chicken a few hours in advance or one day

Add chicken pieces and marinade, except oil, minced garlic, salt and pepper into a bowl and mix well, then cling wrap and refrigerate for later about 30 minutes. After 30 minutes, heat the pan on medium heat. Then add garlic and onion cook until fragrant about 1 minute. Add chicken pieces and the marinade cook for about 9 minutes, toss around until chicken pieces are nearly cooked. Now add in the prawns, toss around to coat with chicken pieces and marinade until prawns are cooked about 1-2 minutes. Set aside on plate cover in tented foil.

Put kettle on. Open shin ram yun noodles packet and condiments with it, place in a deep bowl. Cut cherry tomatoes into half, wash and dry baby spinach and spring onion; cut the spring onion. Then put into the prepare bowl of noodles and condiments.

When the water is boiled, pour it into the prepared bowl. Transfer to the microwave and microwave for 5-7 minutes until the noodles are softened. Slowly and carefully bring it out from the microwave. Add some cooked chicken pieces and marinade, prawns into the noodle soup. Give a couple of stirs to mix well. Serve immediately. Enjoy with a glass of white wine!!!
