
Got bean shoots on sale. There is another name for it: bean sprouts. I crave for bean shoots, and I hate to pluck its roots and time consuming. Since I have not had them for a while and it’s on sale, I bought it and I had pour the wrong sauce: I had add oyster sauce instead of soy sauce.
Do you know it can be eaten raw on salad or sandwiches for crunch. Add to stir-fries, soups (like pho), noodle dishes, or sauté with other veggies. My mom said it can’t be eaten raw. I had them both cooked and raw. Supposedly, raw will keeps it nutritious rich in vitamins, minerals, fiber and antioxidants.

My quick and simple dish but time consuming; plucking the roots are healthy, comforting and delicious despite adding oyster sauce. Let’s cook!!!
Ingredients
750 g bean shoot, pluck the roots or tails
2 Tbs minced garlic
1 Tbs oyster sauce
2 Tbs Shao Xing Chinese cooking wine
2 Tsp fried shallots
oil
salt
pepper
water
Method
Heat a pan over medium high heat. Add the oil and garlic and stir fry for 20 seconds. Stir in the sprouts and raise the heat to high.
Add oyster sauce, fried shallots, Shao Xing, salt and pepper. Cook and toss bean shoots constantly, for 1-2 minutes. Just sprinkles some water for extra sauce. Check seasoning and add if needed more salt and pepper. Bean sprouts exude a lot of water. Serve immediately with rice and a meat dish on the side. Enjoy!!!
