Red wine berry cherry slushie

Here’s my second red wine berry cherry slushie. For this recipe, I have changed Cabernet Sauvignon to Merlot. Freeze a bottle of Merlot in the ice cube tray two days in advance. Today, I am using strawberries, blackberries, and cherries: I removed the seeds and cut the flesh into tiny bites to fit into the ice cube tray with Merlot. I changed orange liqueur and honey to bourbon and glucose.

Can I mix wine with bourbon? You absolutely can. Yes, you can absolutely freeze red wine and cherries together, and it is a popular method for making “frosé” (frozen rosé) or red wine slushies. The alcohol in the wine prevents it from freezing solid, resulting in a soft, scoopable slushy texture. The freezing red wine and cherries did wonders for my slushie. There’s a swirl of flavour as well as coolness. Let’s make a red wine slushie!!!

Ingredients

Freezing in ice cubes trays

1 bottle Merlot
14 cherries, stems and seeds remove, cut into tiny bites

Slushie

12 strawberries, stems removed
100 g blackberries
4 ice cubes
6 red frozen red wine and cherries ice cubes
1/4 c bourbon whiskey
1 Tsp glucose (OPT)

Method

Two days in advance

Place an ice cube tray with water into freezer overnight. Next place a bottle of Merlot in the fridge for 2-4 hours. When nearly time up of cooling Merlot, washed and removed cherries stems and seeds. Then cut into tiny bites to fix into the ice cubes. Open the Merlot wine, gently pour into each ice cubes with cherries inside. Put then red wine cherries ice cube trays in freezer for overnight.

The next day

Removed the red wine ice cubes from tray. Place all ingredients to a high-speed blender. Start with red wine cherries ice cubes, water ice cubes, strawberries, blackberries, bourbon, and glucose. Blitz until smooth. Divide between glasses, chill for 1 hours in fridge. Note: I place them in a metal bowl and in the freezer for 15-20 minutes to get some frosty bits. Bring out from freezer for 5-7 minutes onto benchtop. Then use a ladle to scoop some into glasses. I place the glasses in freezer for 5-7 minutes to chill them. Remember to take them out. I am not sure it the glasses can stand the freezing, but worth the try for 5-7 minutes.

Note: Don’t use expensive wine. You can use frozen berries instead of fresh. You can use yoghurt or orange juice along with wine, but you have to reduce wine. The blended red wine cherries slushie can be frozen to serve later. Simply pour it into a metal bowl and freeze.

From one of the recipes saying: “Wine has a low alcohol content and it will freeze to a certain extent. It doesn’t get as solid as water but freezes to a semi-slushy consistency that maintains the cube shape rather well.” To thin it out, add about 2 ounces of wine to the blender with Seltzer, club soda, or ginger ale can be blended into the slushie, too.”

Let cool completely and store in a sealed jar in the fridge for up to 1 month. Wine Substitutions: Sweet red blends or sweet Lambrusco also work well in place of Red Moscato. You can make the slushie up to 3 days ahead and store it in the freezer. Just scrape or stir before serving. A frozen glass helps keep the slushie from melting too quickly on warm days.”
