
Glad to find this picture again. I don’t know why I didn’t post it in 2018. Anyway, I best getting it written up and post it. Bought apples, sliced mushrooms, cherry tomatoes, and baby spinach. Something healthy to have on hot days, cold days or any other days. Did you know that eating apple a day keep the doctor away. My doctor recommend Royal gala apple.

It can be your New Year resolution or just a quick, healthy, comforting meal. I love it as it has a crunchy texture; everything is fresh and great with a lighter balsamic vinaigrette. Let’s get healthy!!!
Ingredients
1 apple
6 cherry tomatoes, halved
some sliced mushrooms
some baby spinach
White balsamic vinaigrette
5 Tbs white balsamic vinegar
5 Tbs oil
1 1/2 Tbs honey
1 Tbs lemon juice
salt
black pepper
Method
In a small bottle with a lid or a jug, add oil, white balsamic vinegar, honey, lemon juice, salt, and pepper. Close the bottle with the lid. Shake the bottle to get all the vinaigrette ingredients mixed well. Set aside.
Now wash and dry the apple, cherry tomatoes, and baby spinach. Core the apple and cut it into bite-size pieces, and halve the cherry tomatoes. Then place them into a metal bowl. Next, add the sliced mushrooms and baby spinach into the prepared bowl with the apple pieces, and baby spinach. Gently toss to mixed them up.
Now pour the balsamic vinaigrette over the apple salad, toss gently to coat them. Check seasoning. Spoon into a bowl. Serve immediately. I like extra black pepper on top of my apple salad. Enjoy with a glass of chilled orange juice!!!
