
I have leftover cooked rice, and mixed vegetables: linked attached below. Craving for prawns curry, so I bought a bottle of tom yum paste, prawns, and green beans. I have cooked a big pan so that I can eat it for a few days. My sister gave me some fresh red chili. Today all my food are spicy.
Google: “Fried rice is a dish of cooked rice that has been stir-fried in a wok or a frying pan and is usually mixed with other ingredients such as eggs, vegetables, seafood, or meat. It is often eaten by itself or as an accompaniment to another dish.”
Traditional Chinese fried rice recipe calls for Chinese sausage or lup cheong, vegetables, eggs, overnight rice and soy sauce. The ingredients are cooked over intense high heat in a Chinese wok, with the essential aromas from the wok hei or breathe of wok.
My meal is precious and it’s infused flavoursome and aroma depth is there making it delicious, spicy vibrant, and satisfying my soul. Let’s cook.
Ingredients
Tom yum fried rice
5 c cooked overnight rice
4 eggs, beaten
3 Chinese lup cheong sausage, cut into bite size
1 1/2 onion, finely sliced
5 Tbs tom yum paste
2 Tbs soy sauce
2 Tbs Shao Xing Chinese cooking wine
1 Tbs teriyaki sauce
1 Tbs fish sauce
3 Tsp minced garlic
4 Tsp sesame oil
2 Tsp diced ginger

Prawns and green beans curry
25 medium size prawns
10 -12 green beans, stems removed, cut to bite size
4 -6 curry leaves
5-7 Tbs tom yum paste
1 brown onion, chopped
1 cup water
1 can coconut milk
2 Tsp chilli powder
1 1/2 Tbs olive oil
1 Tsp ginger powder
1 Tsp garlic minced
1 Tsp coriander powder
1 Tsp mint masala
1/2 Tsp cumin
1/8 Tsp turmeric powder

Method
Prawns and green beans curry
Devein and wash prawns, drain and set aside. Pour 4 Tbs oil into another pot over medium heat. Fry onion and garlic until translucent. Then add tom yum paste, ginger, and fry till fragrant. Now add chilli powder, cumin, mint masala, curry leaves, coriander and coconut milk. Frying for about 4 minutes. Next add salt, pepper and turmeric and fry for 2 minutes.
Add water and green beans, stir to mix well. Bring to boil until curry sauce thicken about 6-8 minutes. Now add prawns and cook about 4 minutes. Do not overcook prawns. Season to taste. Check for the spiciness. Switch off hob. Let the flavours absorbed.
Tom yum fried rice
Heat 4 Tbs oil in a hot pan until surface seems to glitter slightly. Pour beaten eggs into pan and leave to cook on the base of the pan for 10 seconds before folding egg mixture over onto itself with a spatula and lightly scrambling for about one minute or until almost cooked through. Carefully remove eggs from pan with a spatula and drain on paper towel. Set aside.
Add 1 Tbs oil and sauté 1 Tsp garlic until fragrant. Add Chinese lup cheong sausage, stir and cook for about 2 minutes until soft. Remove and set aside. Heat pan on medium high heat and add 4 Tbs oil. When the oil is hot, add 1 Tsp garlic and fry until fragrant. Then add onion and ginger. Stir fry for 1 to 2 minutes, until it starts to brown and soften.
Add in rice, tom yum paste, sauces and eggs. Use spatula to break up eggs into smaller pieces while cooking about 20 seconds. Push the rice into the middle of pan to let the edge of pan heat up. After about 20 seconds, pour Shao Xing wine around the edge of pan. Stir fry for another 20 seconds. Add Chinese lup cheong sausage, stir to combined well, and rice is heated through for about 4 minutes.
Adding the wine using this method gives the dish a little extra “wok hei” according to my grandma. At this point, taste the rice to see if it needs a little more salt, soy sauce, or white pepper and season accordingly until the rice becomes toasty. Remove from hob.
For me: reheat the mixed vegetables in a small bowl on microwave for 1-2 minutes. For you follow the recipe attached belowed. Served the mixed vegetables with tom yum fried rice, prawns, green beans curry and cut chili. Enjoy with a glass of white wine!!!
Note: You can use vegetables such as carrots, green beans, capsicums, and cabbage. You can also use any vegetables of your choice. You can add diced chicken or just use bacon instead of Chinese lup cheong sausage. You may use herbs such as basil, parsley, coriander and kafir lime leaves. You may omit lup cheong use pork, squid, fish or beef. You may omit tom yum paste and use sambal chili paste. You can use oyster sauce instead of teriyaki.
You can omit tom yum paste and use 1 packet A1 Action One seafood curry paste, bought. You can add red, green and yellow capsicum with your prawns or any vegetables of your choice. You can omit cut fresh red chili.
