Air fryer panettone sultanas candied fruit with cherry plums pudding

Had my parents, two sisters and family over for dinner. I craved for panettone pudding. As there are abundant cherry plums in my garden. I have decided to add in to my panettone pudding. I dare to tryout using air fryer.

The real panettone, though, remains a yeast dough with sultana raisins and candied fruit with a soft, moist, fluffy crumb. “

I am happy that my pudding baked in air fryer turned out delightfully soft, sweet, tart, refreshing, and delicious. Let’s get air fryer to do the job!!!!

Ingredients

900 g panettone sultanas candied fruit
18 cherry plums, deseed and cut into bite size
10 Tbs water, divided
2 eggs, lightly beaten
100 g caster sugar
250 ml vanilla custard
125 ml milk
1 Tsp vanilla extract
2 Tbs castor sugar (OPT)

Method

Greased 20 cm round air fryer pan and set aside. Using a serrated knife, cut the panettone roughly into 1cm / ½ inch thick, place the bottom part of panettone at the bottom of prepared pan. Scatter some bite size cherry plums over the top. Drizzle 2 Tbs water over the panettone.  Panettone is fabulously soft and mouldable, so this isn’t a hard job. 

Place another thick panettone round cut over the top, scatter some cherry plums and drizzle 2 Tbs water over the panettone. Repeat with panettone, cherry plums and 2 Tbs water. The last panettone which is the top of panettone, place on top and drizzle 2 Tbs remaining water over the top.

Put sugar and the remaining 2 Tbs water in pot and swirl around to help dissolve sugar before putting on hob medium high heat. Caramelised sugar and water mixture by letting it bubbly away without stirring until turn deep amber colour about 3-5 minutes. Keep looking. Turn heat down to low and add vanilla custard ignore the spluttering.

Beat in milk, egg, and vanilla extract over low heat until well combined. Pour the caramel custard over the panettone; gently push the panettone all around to create gaps to fill with the custard and leave to soak for about 10 minutes. Scatter the remaining cherry plums and 2 Tbs castor sugar on top. Heat air fryer at 160 degrees C for 10 minutes.

When air fryer time is up, place the pan into the cup and plug on the machine. Bake it for 30 minutes. Check with a skewer if comes out with batter, put back in another 10-15 minutes and cover with foil until golden and cooked. Serve with cream or vanilla ice cream, or custard.

Note: You can use croissants, or raisin bread instead of panettone. You can use any fruits of your choice. You may want to add more eggs perhaps 2-4 more depending on the amount of bread or panettone you use or how custardy you want your pudding to be. You can add marsala wine instead of water. You might want to use marscapone 250 g and double cream 250 g.
