
Got leftover uncooked daikon, bought roasted chicken wing and some baby spinach. Felt like having Shin ram yun noodles soup. This is my quick and lazy meal.

Ingredients
7 pieces daikon
2 goji berries
1 packet shin ram yun noodles
1 chicken wing
1 small extra skin (OPT)
1 Tsp Shao Xing Chinese cooking wine
baby spinach leaves
water
salt
pepper
Method
Open the shin ram yun noodles packet and condiments that come with it. Place enough water to cook the daikon pieces along with goji berries. Bring to a boil on high heat and cover for 5 minutes. Lower heat to a simmer for 25-30 minutes until the daikon is softened and cooked.
Now season with Shao Xing Chinese cooking wine, the condiments, and noodles, salt and pepper to taste. Cook a further 5 minutes until noodles are softened and cook. Add in baby spinach leaves and chicken wing and extra skin. Cook for 2 minutes to warm up the chicken wing and extra skin.
Once done, cooking noodles and warmed up; switch off hob. Spoon the noodles, daikon and chick wing into bowl place on top of plate for easy to carry. Then ladle the soup and baby spinach and the extra skin. Serve immediately. Enjoy!!!
Note: you can add carrots along with daikon and spare ribs. You can omit Shao Xing Chinese cooking wine and use 1/2 Tsp Chinese cooking vinegar. Garnish with spring onion or coriander or scatter some fried shallots. For extra flavours you can add dried squids about 1-2 small pieces or some dried scallops.
