
Upgrade your Christmas’s mains with Mussels
Make Mussels famous this Christmas for God had given us abundance of food to share. Your Christmas feast doesn’t have to involve hours slaving over a hot stove. Seafood such as mussels are mandatory the festive food. They are so easy to serve up. A fresh sweet white wine butter sauce is all the mussels need.

My sister’s friend and family came to visit her, they went to a nearby suburb and saw there were abundance of mussels. She bought me about 1 kg, and some other goodies. Do you at time, don’t expect anything and then there they are the gift from God. Well, I sure do; these mussels are my favourite seafood.
Uhm!!! I might have been good and/or my sister is good to me. Thank you, God, for looking out for me and also thank you my sister. There are some mussels that aren’t open. My luxury meal mussels are plump, taste of fresh sea taste, delicious and perfumed with butter and sweet white wine sauce. I dunk my garlic bread into the sauce. It’s like having a heavenly feast and serve with a glass of white wine. Let’s share and upgrade Christmas mains with mussels!!!
Ingredients
1 kg mussels
1 Tbs minced garlic
1 c of sweet white wine or dry
1/4 c oil
4 Tbs butter
some parsley
garlic bread (bought)
salt
black pepper
Method
In a large, deep pan, heat oil. Add garlic, season lightly with salt and pepper, and cook over high heat, stirring, until the garlic is softened and lightly browned, about 1-1/2 minutes.
Add the mussels and cook, stirring, for 1 minute. Add the wine, cover, and cook the mussels until they open, about 5 minutes. Remove from the heat. Using a slotted spoon, transfer the mussels to a big deep bowl, discarding any mussels that do not open. Divide the mussels into 4 bowls, I like my mussels to stand slanting a bit. You can decorate anyhow you like.
Next add the butter and parsley to the wine, swirling and shaking the pot until the butter melts. Slowly pour the sauce over the mussels, stopping before you reach the grit at the bottom of the pan. Serve mussels with garlic bread and white wine. Enjoy!!!
Note: With some leftover white wine butter sauce from the pan, strain the grit over a sterile bottle, when it had cool down, keep in fridge. I use it to go with pasta the next day.
