
This Christmas make it with Love and let your heart shine like the Light of the world
Christmas is about family and friends gathering to celebrate Jesus’s birth if you are religious. For many it’s a festive of eating out in restaurant or at friends, overseas holidays celebration, kids eagerly waiting to unwrapped Christmas presents under Christmas Tree. Some churches and people would open their home for people who had no place to celebrate or no one to be with.
To me, Christmas is having my family gathering together; each family brings a dish to share, sitting on my long table, having good communication, of course eating all the delicious meals and ending with a good sweet and/or heavy savoury desserts.
The True Spirit of Christmas to me is yielding up to Jesus with my heart, Glorifying and Enjoying Jesus forever, Giving thanks for my family, friends and everything. Having friends certainly do spread the Love, Peace and Joy of a long time friendship. This is how everyone should have in celebrating True Spirit of Christmas: Thankfulness, Giving-Generously, Immeasurable-Loving-kindness, and Forgiving-heart. Ahem!!! it can be everyday of your life too not just on Christmas season.
Had lunch at a friend place. We each bring a dish or two for our lunch. This cake is my gift, Jesus had given me that I have made with Love and shared it with my friends. Nothing beats a thoughtful homemade cake that I had pour out of my heart. My cake is beautiful, brightens up this Summer Christmas, moist, delicious and everyone is enjoying it with a bright big smile: satisfied. Ingredients
Snow balls
320 g canned condensed milk
320 g shredded coconut
chocolate sprinkles
bright colour sprinkles
Cake
250 g butter
200 g plain flour
200 g castor sugar
4 eggs
1 Tsp baking powder
1/2 Tsp salt
1 Tsp vanilla extract
4 Tbs milk
Cream cheese frosting
250 g cream cheese
250 g icing sugar
113 g unsalted butter, room temperature
125 ml thickened cream
Garnish
raspberries
bright colour sprinkles
Method
Make snow balls – One day in advance
Add shredded coconut and condensed milk in a bowl. Mix well with a spoon until combined. Wear gloves and use a tablespoon to scoop some up onto your hand, roll them into balls. Place them on a lined tray. Sprinkles some chocolate sprinkles over some snow balls just for colour. Allow the snow balls to firm up in fridge for about 2-4 hours. When it had firmed up, store them in an airtight container in fridge until ready to eat or as decorations for cake.
The next day
Preheat oven 190 degrees C. Grease and line 23 cm round spring form pan and set aside.
To make frosting
Note: Make sure the unsalted butter is at room temperature. I leave mine out overnight when it’s cold weather, but in the hotter months this can take as little as 30 minutes!
Beat butter in a metal basin until light and smooth about 1 minute. Add cream cheese beat until light and smooth about 4 minutes. Next add icing sugar beating for 5 minutes to make it really smooth. Now, add thickened cream beating again until increase in volume about 5 minutes. Place in fridge, cover with cling wrap so it will be a bit firm as spreadable consistency.
To make cake
Mix flour, baking powder and salt mix well, set aside. Beat butter and sugar until well combined or pale fluffy about 3 minutes.
Add egg beating well each addition until creamy about 1-2 minutes after adding each egg. Remember to scrape down all the sides for even mixing. Now add in vanilla and mix well again.
Next add milk. Spoon batter onto prepared pan. Gently shake the pan to smooth batter evenly. Bake for 30 minutes first. To prevent cake from browning too fast cover the cake with foil if you don’t have a bigger metal basin. Continue to bake further 10-20 minutes until skewer out clean.
Once cake top is set, remove the basin. Switch off oven, leave cake in oven for 20-30 minutes. Then removed to wire rack to cool for 15 minutes. After that transfer to cake base container to cool completely.
To garnish the cool down cake
Bring out the cream cheese frosting, remove the cling wrap sit for about 3minutes. Then spoon the frosting with a big metal spoon a big dollop, placing in the centre and spread out with the back of the metal spoon until the edges of cake. Next shake the bright colour sprinkles over the top of frosting.
Now place 5 snow balls in a circle, followed by 3 snowballs in the centre make some space in between to place the raspberries in a circle and in the centre. Then sprinkles a bit more bright colour sprinkles over the top of snow balls and the raspberries. Enjoy with a cup of tea or coffee.
