
Do not be surprised by trying out eggless cake on air fryer
Got buttermilk that will expire in 5 days’ time. When I wanted to try making air fryer buttermilk cake, I discovered I didn’t have any eggs. So, I searched for recipes using buttermilk and eggless options. Guess what? I found that most recipes only use a few tablespoons of buttermilk. I tried searching for oven buttermilk cake recipes without eggs; there are a few recipes. However, the recipes had butter and buttermilk, which at least used buttermilk in cups, and they included eggs.
Therefore, I ask God to help me get rid of buttermilk and to get eggless recipes to finish the buttermilk as I don’t like wasting food. I came up with this recipe using my homegrown cherry plum. Thus, I remembered some air fryer recipes timing various time slots ranging from 30 minutes to 1 hour. My cake takes me 1 hour and 30 minutes; not including 10 minutes at 160 degrees C. Every half hour, I check with a skewer, and it comes out with batter.
Maybe the buttermilk might be too much. Next time I will reduce the volume. Lesson learned, I will get better next time with air fryer buttermilk cake with egg. I know it doesn’t look beautiful. The taste has sweet and sour notes from the cherry plum; it’s moist and delicious. Let’s be courageous and try!!!

Ingredients
16 cherry plums
200 ml buttermilk
200 g plain flour
150 g granulated sugar
100 ml vegetable oil
1 Tsp vanilla essence
1 1/2 Tsp baking powder
1/2 Tsp bicarb soda
cinnamon sugar
icing sugar
Method
Greased with oil this time and lined with baking paper for 20 cm baking pan that can sit into my 7 L air fryer. Cut 8 cherry plums into halved and the remaining chopped and seeded all the 16 cherry plums. Place the halved cherry plums all around the lined baking pan and shakes some cinnamon sugar over them. The chopped cherry plums in a bowl, shakes some cinnamon sugar over it and stir to mix well. Set aside in fridge.
Preheat air fryer at 160 degrees C for 5 minutes. Get all your other ingredients measured ready. Mix buttermilk, sugar, oil and vanilla in a mixing bowl with a hand beater, beat until sugar dissolved. Next add in flour, baking powder bicarb soda in 3 slots. Mixing well each time until batter is smooth.
Spoon some batter over the halved cherry plums coated with cinnamon sugar, and smooth the batter. Then spoon some of the chopped cherry plums mixed with cinnamon sugar over the batter: spread them around. Followed by another layer of batter and scatter some more chopped cherry plums.
Gives a few gentle knocks on bench top to clear any air bubbles and to smooth the top. Scatter some more cinnamon sugar over the top. Bring out the cup of air fryer, put the baking pan in. Bake for 30 minutes, check with skewer out till have batter. Put back in further 10 minutes, do check if batter is not to brown at 5 minutes. Cover the pan with foil; making sure foil don’t fly up to the heat element. Continue baking further 5 minutes.
Bring cup of air fryer out, check with skewer, out till has batter, put back in further for 20 minutes. This time some parts are clean but still some part have batter. I decided to put back in for 30 minutes, and check at 15 minutes; still have a tiny bit of batter. So, again another 15 minutes into the air fryer for it to be safe. Phew!!!! finally I prick all around and center, skewer out clean. Place back in cup and back into the hot air fryer for 10 minutes.
After 10 minutes up, bring out the cup, remove the pan and removed the foil. Let it sit on rack for 45 minutes before turning out from baking pan to a plate. Then next day, I dust it with icing sugar. Some part of the icing sugar dissolved. Therefore, it’s not beautiful but moist and delicious. Enjoy with a cup of English Tea!!!


Note: Air fryer model and brand vary. You might need less time or more. If you cut volume of buttermilk, it might be faster baking and less time. If you add eggs, it might also change the timing. Best to bake at 25-30 minutes first, always check with skewer and cover with foil if it’s brown quickly. Secure foil to prevent from flying up to the heat elements.
You can search for the buttermilk air fryer cake that uses tablespoon only. You can add eggs or any fruits, you can use butter instead of oil like other air fryer recipes did it. You can grease it with butter instead of oil. You may omit cinnamon sugar and add salt or chocolate.
