Shin ram yun noodles soup with Brussels sprouts and broccolini

My budget lunch is always noodles soup with whatever ingredients that are on sale. I just love eating noodles soup that is spicy and when I crave for it. Today, I have Brussel sprouts and broccolini on sale. There is no meat as they are expensive.

My quick simple meal is spicy, comforting, healthy and delicious. Let’s cook!!!

Ingredients

1 packet Shin ram yun
2 stalks broccolini, cut to bite size
3 Brussels sprouts, halved
hot boiling water
salt

Method

Bring the kettle to a boil. Once boiled, pour into a pot and put some salt, cook Brussels sprouts and broccolini for about 5 minutes. Empty the noodles and condiments that come with it into a bowl.

Once the Brussels sprouts and broccolini boiling time up, transfer them to the prepared noodles in the bowl with enough water to cover the noodles. Cook in the microwave on high for 6 minutes until noodles and vegetables are tender.

Carefully removed from microwave and time to eat. Enjoy!!!
