Air fryer banana blueberry cake

I have search about 150 air fryer cake recipes: banana loaf/bread specifically. Each have different baking time ranging from 25-45; two recipes had air fryer time ranging 45minutes to1 hour. Most of the recipes said temperature is 160 degrees C for 10 minutes, then lower to 150 degrees for 80 recipes baking time is 30-45 minutes. Most recipes use round pan and about 35 recipes use loaf pan. Guess their air fryer is the square shape like microwave. Most air fryer are 7-10 L and different models, brands and different country products.

I tend to go into problem-solving all too readily, acting as if I have the capacity to fix everything. This is a habitual response, so automatic, that it bypasses my conscious thinking. Not only does it frustrate me, it also distances me from God. I should make my relationship with God my primary concern. So, I pray to God for which time is better. Then leave it into God’s hand. Trusting him to guide and help produce a beautiful cake that I can share with my parents, two sisters and one brother in law.

I baked a cake in my air fryer 7 L, using ingredients from various recipes. I glazed it with butter and added blueberries, banana slices, and chocolate sprinkles. It turned out delicious and moist. One sister had two pieces, while the rest of us had one after a big meal of beef, potatoes, and egg curry, and asparagus prawns with another plate of green leaves. Let’s bake a banana blueberry cake in the air fryer!!!

Ingredients

150 ml vegetable oil
150 g self raising flour
150 g castor sugar
150 g blueberries
1 Tsp baking powder
2 eggs
2 ripe banana
1 Tsp cinnamon powder
1 Tsp vanilla essence

Garnish

75 g butter, melted
half a banana, sliced
chocolate sprinkles

Method

Grease with lots of butter and line the bottom with baking paper of a 20 cm round pan that fits my air fryer. Mash the banana with a masher in a big metal bowl. Lightly beat the eggs in a small bowl. Combine oil, sugar, flour, baking powder, cinnamon powder, vanilla essence, eggs, and blueberries into the mashed banana. Mix all together well with a wooden spoon.

Preheat air fryer for 5 minutes at 160 degrees C. Pour batter into the prepared pan, gives a gentle knock on bench top to get rid of bubbles. Making sure the top is smooth. Bring out the cup of air fryer, place the baking pan in, put back the cup into the air fryer machine. Bake it for 10 minutes. Then reduce to 150 degrees C and don’t bring out the air fryer cup. Bake further for 25 minutes. Bring out test with a skewer, if still wet, place back into the air fryer machine for another 10 minutes. Do check it at 5 minutes; if too brown cover with foil. Continued baking. I continued for another 10 minutes until skewer out clean no batter.

So, my baking time is 45 minutes at 150 degrees C plus 10 minutes at 160 degrees C. Nearly 1 hour. Once done, removed baking pan from air fryer cup. Switch off the machine. Let it cool for 35 minutes. Then remove from pan to a plate to cool further.

Meantime, melt butter in microwave. Let the butter cool slightly about 10 minutes. Brush it on top of the cake. Leave it to cool. After 35 minutes, brush the butter over the top of the cake. Let it cool, continue brushing butter making stroke design until finished the butter. Set it to cool and slightly harden.

Just before eating, decorate with slices of banana, arrange 8 in a circle and 3 slices of banana in the center and sprinkles chocolate sprinkles all over the top of banana and cake. Enjoy with coffee, tea or dessert wine!!!

Note: Air fryer time vary depending on the ingredients amounts. I didn’t add any nuts. You can add walnuts, pecans or any fruits. You don’t have to glaze with butter. Test the various recipes until you get it right.
