Rump steak brandy cilantro parsley mushroom mixed salad cherry tomato and walnut

Bought sliced mushrooms, cherry tomatoes on sale. Decided to use my second rump steak which I bought it 2 days ago and adding cilantro parsley pesto. Not using air fryer today. I am only using oil, salt and black pepper to season my rump steak.

Ingredients

1 rump steak
4 walnuts
3 cherry tomatoes
50 g butter, diced
20 g butter, diced
1 Tsp minced garlic
1/4 c brandy
mixed salad
cilantro parsley pesto
mixed salad

Method

Let rump steak sit in room temperature for 30 minutes. Pat the steak dry with a paper towel. Season the rump steak generously with salt and pepper. Pour a thin layer of oil on saucepan, ensuring even coverage. Heat saucepan to a high heat, almost smoking.

Using a long food clipper, slowly add seasoned rump steak into the hot pan in the centre. Sear rump steak at the high heat for 2 minutes until not red coloured. Then turn over sear the other side for 1 minute. Move rump steak to the side of the saucepan and immediately add 50 g butter, garlic and 2 Tbs cilantro parsley paste and once the butter has melted, drizzle this continuously over the steak, cooking for 2 minutes total. Remove the basted steak from saucepan to a warmed plate. Cover loosely with tented foil; let rump steak rest for 5 minutes to ensure the juices reabsorb for maximum tenderness.

Cook sliced mushrooms

Now heat 1 Tbs oil and 2-4 Tbs cilantro parsley paste in the same saucepan on medium heat. When pan is hot, add mushrooms and season with salt and pepper. Quickly toss to coat mushrooms with the oil and cilantro parsley paste. Spread the mushrooms out in a single layer.

Cook for 2 minutes without stirring. Stir once, trying to flip to brown both sides; cook for further 2 minutes without stirring. Reduce heat to low and add 20 g butter and another 2 Tbs cilantro parsley paste. Cook for 2 more minutes, stirring frequently, until mushrooms are fully cooked, butter is melted. Return rump steak back to saucepan. Wear rubber gloves, pour over brandy and carefully ignite for 30 seconds. Carefully, switch off hob and cover with a lid for 1 minute. Remove lid, drizzle the sauce over rump steak.

Assemble the plate: Place some mixed salad at the corner, drizzle some cilantro parsley paste and oil. T the right corner, place some cooked mushrooms and butter cilantro parsley butter sauce. Place rump steak in the centre, place 3 mushrooms in a row with butter cilantro parsley butter sauce. Now bottom left corner place 3 cherry tomatoes and far right corner place 4 walnuts pieces. Enjoy with a glass of red wine!!!
