Shin ram yun noodles black fungus, fish cakes and rocket leaves soup

Here again my meal for one: Shin ram yun noodles as a quick lunch. I found in my pantry I have 3 dried black fungus, in my freezer; Thai fish cakes, and in my fridge, rocket leaves. Voila, leftovers!!

“Black fungus, also known as cloud ear or wood ear fungus, is an edible mushroom used in Asian cuisine with potential health benefits such as lowering cholesterol and blood sugar, providing antioxidants, and supporting liver and gut health. It is typically sold dried and must be rehydrated and cooked before consumption. Its high fiber content aids digestion, and it contains nutrients like copper, selenium, and riboflavin. “Thai fish cakes, made from fish, red curry paste, and aromatics, are fried and provide lean protein, omega-3 fatty acids, and essential vitamins and minerals for heart and brain health. I also enjoy using the microwave and hot boiling water to cook my quick meals. I’m glad I can get rid of them and create a completely healthy, satisfying meal. Let’s cook!!!

Ingredients

1 packet of Shin ram yun
3 dried black fungus
3 Thai fish cakes, thawed
rocket leaves
hot boiling water

Method

Put kettle on. Place the 3 dried black fungus into a small bowl and soaked in hot boiling water for 30 minutes. Empty the noodles and condiments into a bowl. Place a plate under the bowl so easy to remove from microwave.

Cut the Thai fish cakes into bite size. Place into prepared noodles bowl. Pour the enough hot boiling water into prepared noodles bowl and cut the black fungus into bite size and add to the noodles bowl. Transfer the bowl to microwave.

Microwave for 6-7 minutes until cooked. Bring out and serve immediately. Enjoy with a cup of tea.
