
Heavy rain and strong winds today, I don’t feel like going out getting caught in the rain and least getting blown away. I am glad I got a dozen eggs, a bunch of lettuce, bread, and a tomato.
I will not allow this raining and strong wind day to make me depressed. I am still going to be joyful and put on my creative hat. Here’s my simple lunch from the fridge. At time, it’s good to have canned, dried food in the pantry for raining days such as today. I will keep my pantry food for some other days. I must have chili sauce. Best use the coriander in the fridge before they go rotten. As you know me, I don’t like to waste food.
Be grateful to have food on the table. Simple food can be turned into creative, colourful, comforting and delicious meal. Let’s have lunch at home and keep safe from cold raining and windy day.

Ingredients
2 slices of bread
1 egg
1 tomato, cut into wedges
1 lettuce
chili sauce (OPT)
butter
coriander
Method
Heat a small pan with some butter. Once butter melted, crack the egg into the butter in the pan. Cook the egg to your liking. I like my egg yolk to be cooked. Meantime, butter the bread and lay the lettuce on top of one buttered bread.
Once egg done, place on top of lettuce. Then place tomato wedges on top of egg, then drizzle chili sauce. Garnish with coriander leaves. Next place the other buttered bread on top. Serve immediately with a cup of coffee. Enjoy!!!
Note: you can add bacon, sausages, mushrooms or salad. You can omit chili sauce if you don’t want. Put BBQ sauce, tomato sauce, or mustard sauce. You can add canned flavoured tuna.
