Herring and vegetables liscio piccolo 40 pasta

Went to the supermarket to get some vegetables and salmon; it is too expensive. Then my eyes caught these herring fillets in mango pepper sauce. I had never had this fish before; though it’s expensive, it’s cheaper than salmon, and it’s already cooked. I asked the fishmonger if I just warm it up and eat it. Well, the fishmonger told me I can eat it just like this. He gave me tiny bits to try. I bought it, but I still preferred to warm it up. I also bought this liscio piccolo 40 pasta because its name is strange to me.

I am glad to tryout this herring fillets. It tastes better when I recooked it together with vegetables and pasta. My dinner must always have chili sauce and chili flakes. The bowls with a lot of parsley had chili sauce and chili flakes. The meal had crunchy carrots, colourful, comforting and delicious. Let’s cook!!!

Ingredients

Herring Fillets In Mango Pepper Sauce 200g
8 cherry tomatoes, cut into bite size
3 carrots, cut to bite size
250 g liscio piccolo 40 pasta
250 g sliced mushroom
275 g baby spinach leaves, divided
250 g canned whole tomatoes with sauce
400 ml mushroom stock
100 ml white wine
4 garlic, sliced
1/4 c oil
2 Tbs tomato paste
parsley
salt
black pepper
chili flakes
chili sauce (OPT)

Method

Heat oil in a large pan over medium heat. Add the garlic cook for 5-7 minutes, stirring frequently. Now add in mushroom stock, wine, canned whole tomato with sauce, tomato paste, and 250 g baby spinach, increase heat to medium high, cover with a lid; to boil the stock and wine about 5-7 minutes.

Once boiled, add in cherry tomatoes, carrots, mushrooms, and pasta. Reduce heat to medium and simmer for about 10 minutes or until pasta is al dente. Add the remaining baby spinach leaves. Season with salt and black pepper. Toss in herring fillets to mixed well and cook for 2-3 minutes. Garnish with parsley, chili flakes and chili sauce. Serve with a glass of wine. Enjoy!!!
