Salmon and salad sandwich

Bought sliced salmon and mixed salad on sale. There’s no need for a lot of utensils when you are making sandwiches. Something different for a light lunch that is healthy instead of my favourite Shin ram yun noodles.

Google:” Salmon slices are nutritious pieces of salmon rich in protein, omega-3 fatty acids, vitamins, and minerals. They support heart and brain health, enhance cognitive function, promote healthy skin, and provide essential nutrients for energy and hormone regulation. Omega-3s can lower blood pressure, reduce inflammation, and are vital for brain function and memory. Additionally, they protect skin from damage and signs of aging, while vitamins D and B contribute to energy, immune function, and mood. Potassium aids in regulating fluid balance essential for nerve and muscle function.”

“Mesclun, a French term for a blend of tender young salad greens and herbs, offers a variety of textures, colours, and flavours while being rich in vitamins A, C, K, and minerals like potassium and iron. Its high dietary fiber supports digestion, and its antioxidants, including flavonoids and polyphenols, protect cells from oxidative stress and may lower the risk of chronic diseases and benefit heart health. Emerging research indicates mesclun’s potential anti-inflammatory properties, enhancing its nutritional value, especially when eaten raw.”
