Curry bee hoon tofu pok and vegetables soup

My dad bought me curry bee hoon instant noodles to try. Since it’s cold, I decided to have a soup meal. This meal is easy to prepare and requires few utensils. Normally, curry noodles include tofu pok, fish cakes, chicken, and vegetables. I used fried tofu, tofu pok, lettuce, mixed frozen vegetables, and topped it with dried shallots.

Its name literally means “bean bubble” describing the shape of the tofu as a bubble.” “Frozen mixed vegetables consist of three or more succulent vegetables, properly prepared and properly blanched; may contain vegetables (such as, small pieces of sweet red peppers or sweet green peppers) added as garnish; and are frozen and maintained at temperatures necessary for the preservation of the product.”

My bee hoon noodles are spicy, colourful, comforting, healthy and delicious. Let’s cook!!!

Ingredients

1 bee hoon instant noodles packet
3 fried tofu, cut into half
3 tofu pok
2 cos lettuce, cut to bite size
mixed vegetables
dried shallots
enough water

Method

Defrost the dried tofu, tofu pok and mixed frozen vegetables in microwave for about 30 minutes at interval until defrosted. If still frozen, repeat heating in microwave. Put kettle on. Open the bee hoon packet, and the condiments. Empty them into a bowl.

When done defrosted, cut the dried tofu into halved. Place dried tofu, tofu pok, and cos lettuce into the bowl with bee hoon and condiments. Now add hot boiling water into the prepared bowl. Microwave for 4 minutes until bee hoon soften and dried tofu, tofu pok puff up.

Stir a couple of stirs. Then add in mixed vegetables to the bowl, and microwave a further 2-3 minutes. Bring out from microwave and scatter some dried shallots. Serve with a glass of white wine. Enjoy!!!
